About the role
The role combines the responsibilities of a manager leading the evening service on the floor and a wine leader owning the program. The position requires shaping the atmosphere, setting the pace of service, and evolving the wine program to make the restaurant a destination.
Responsibilities
- Shape the sound, light, and pacing of service to create a seamless experience.
- Own the final five minutes of service and set the rhythm of every night.
- Inherit a respected wine list and curate a coastal-California-meets-Europe perspective.
- Lead, train, mentor, and motivate the front-of-house team, including recruitment, onboarding, scheduling, coaching, and performance management.
- Handle service recovery with transparency and care, fostering guest loyalty.
- Own financial performance, including revenue, labor, cost of goods, and expense management.
- Partner with culinary leadership on menu execution and experience design, ensuring compliance with health, safety, sanitation, and responsible alcohol-service regulations.
Qualifications
- 5+ years of progressive leadership in food & beverage, with experience in fine-dining and bar programs preferred.
- Real fluency in wine and the ability to sell it through story rather than pressure.
- A track record of building guest loyalty, coaching large teams, and growing restaurant performance.
- Strong financial acumen, including budgets, forecasting, and cost control.
- A highly organized systems thinker with genuine follow-through.
- Comfort in a fast-paced, high-volume environment.
- Proficiency with Microsoft Office; HOTSOS, MICROS, MYCHECK, and TOAST a plus.
- A builder's appetite for creating a memorable dining experience.
Requirements & Physical Demands
- California RBS Server ID must be obtained within 60 days of hire; food handler card within 30 days.
- Flexible schedule including evenings, weekends, and holidays.
- Ability to stand and walk for extended periods; lift/push/pull/carry up to 25 lbs frequently and up to 75 lbs occasionally; bend, squat, twist, kneel, and perform repetitive motions as needed.
