Specific Duties
- Wash dishes, glassware, flatware, pots, and/or pans using dishwashers or by hand.
- All dishes, glassware, plastic containers, pots and pans must be put away clean, dry and grease free in a neat and organized manner.
- Transfer supplies and equipment between storage and work areas, by hand or using hand trucks.
- Clean garbage cans with water and proper SDS (Safety Data Sheet) cleaning supplies.
- Maintain kitchen work areas, equipment, and utensils in clean and orderly conditions.
- Place clean dishes, utensils, and cooking equipment in storage areas.
- Sort and remove trash, place it in designated pickup areas.
- Sweep, scrub, and mop floors.
- Ensure no standing water on the floor anywhere in the kitchen, as per the health code violation.
- Ensure all paper towels and soap are refilled at every handwashing sink throughout the kitchen.
- Weekly deep cleaning of both ice machines, plus daily spot cleaning.
- Assist our chefs by preparing ingredients. This may include chopping, slicing, washing, and peeling vegetables and meats.
- Assist with receiving deliveries: verify items against invoices and purchase orders, check product quality and temperatures upon arrival, and report discrepancies or damaged goods to the Chef on duty.
- Store and rotate product according to FIFO standards, ensuring proper labeling, dating, and storage temperatures in walk-ins, freezers, and dry storage.
- Assist with weekly and monthly inventory counts as directed by the Executive Chef or Sous Chef.
- Maintain organization and cleanliness of all storage areas, including walk-in coolers, freezers, and dry storage shelving.
- Follow all HACCP and food safety protocols, including temperature logging during receiving.
Requirements
- Must have 2+ years of experience as a dishwasher/porter at a comparable restaurant or hotel.
- Must have a basic understanding of the English language.
- Must be able to lift 50 lbs. and push/pull loaded carts or hand trucks up to 100 lbs.
- Must be able to stay on your feet for 8 hours plus.
- Must be able to work in cold environments (walk-in coolers/freezers) for short periods.
- Must be able to work flexible schedules including nights, weekends, and holidays.
