Job Description and Duties
Effective July 1, 2025, in accordance with the applicable Memorandum of Understanding, the Personal Leave Program 2025 (PLP 2025) was implemented in response to the status of the State budget. PLP 2025 requires each full-time employee in Bargaining Unit 1, 3, 4, 6, 9, 11, 12, 13, 14, 15, 17, 18, 19, 20, and 21, and related Excluded, Exempt and Statutory Exempt employees, will have their base salary reduced by 3 percent and will receive 5 PLP 2025 leave credits monthly through June 2027. Salaries do not reflect the recent changes.
Part-time employees are subject to the same conditions as full-time employees, on a prorated basis equivalent to their time-base. Permanent intermittent employees are subject to the same condition as full-time employees, based on the number of hours worked in the pay period.
- Supervises and trains staff and the incarcerated workers responsible for preparing meals for patients in a correctional health care facility and oversees the preparation and dispensing of therapeutic diets per physician orders.
- Ensures staff and the incarcerated workers follow all departmental and institutional policies and procedures including, Title 15, Department Operations Manual, California Code of Regulations Title 22, Standard Operational Procedures, Diet Manual, California Retail Food Code, and Food & Nutrition Services Manual.
- Maintains order and supervises the conduct of the incarcerated and protects and maintains the safety of persons and property.
Requirements
The Correctional Supervising Cook, CF position(s) require a high school diploma or equivalent. A minimum of two years of experience in food service management or a related field is required. Must possess a valid Food Handlers Card and a current Food Safety Manager Certification.

Skills
Knowledge of food service operations, dietary needs, and preparation techniques. Ability to supervise and train staff and incarcerated workers. Strong organizational and communication skills. Ability to maintain a safe and sanitary kitchen environment.
