Main Purpose of Job

The main purpose of this position is to train and supervise incarcerated individuals preparing various foods in a correctional facility.

Position Duties

  • Train and supervise incarcerated individuals preparing vegetables, meats, salads, beverages and other foods.
  • Maintain sanitary kitchen conditions including supervision of the washing of pots, pans, dishes, counters and the cleaning of meat grinders and slicers and dining and kitchen areas.
  • Ensure incarcerated individuals adhere to Hazard Analysis Critical Control Point Regulations in food sanitation and food safety in an institutional setting.
  • Search incarcerated individuals in order to prevent concealment of equipment, cutlery, food and other unauthorized items.
  • Maintain control and discipline of incarcerated individuals working in kitchen and dining room areas while keeping a continual count.
  • Operate kitchen equipment and appliances such as mixers, cookers, ovens, stoves, toasters and coffee urns.
  • Measure and mix ingredients according to recipes.
  • Follow Division of Correction regulations, institutional directives and post orders.
  • Enforce rules of conduct among incarcerated individuals and prepare reports of infractions.

Minimum Qualifications

  • Graduation from an accredited high school or possession of a high school equivalency certificate acceptable to the Maryland State Board of Education as described in the Correctional Training Commission regulation.
  • No prior experience required.

Special Requirements

  • Employees must be at least 21 years old.
  • A completed background investigation is required.
  • An oral interview is part of the selection process.
  • A physical examination is necessary.
  • Employees must meet U.S. Citizenship or Resident Alien status requirements.
  • Employees must have a valid Maryland driver's license.
  • Employees must complete and successfully pass the Entrance Level Correctional Training Course during the probationary period.
  • Employees must undergo substance abuse testing.
  • Employees must pass a physical readiness and annual physical recertification to ensure they maintain the physical capabilities needed for defensive tactics.
