Tasks/Responsibilities
- Prepare schedule (including vacation schedule) for stewarding department
- Aid in monitoring payroll daily to control labor expenses
- Train all new hires
- Aid manager with discipline actions
- Maintain a weekly breakage report and review with manager on weekly basis
- Assist with end of the month inventories on china, glass and silver
- Monitor, order and issue all cleaning supplies to stewarding department
- Aid with weekly kitchen inspections to ensure area meets or exceeds Health Department Rules and regulations
- Develop and administer procedures for maintaining inventories of china, silverware and glassware
- Generally responsible for all kitchen sanitation on property
- Ensure appropriate transportation of banquet food and equipment to and from events
- Follow the rules/regulations of food transportation to protect from contamination and spoilage of food
- Properly clean and store all china, silver, utensils, pots, pans, serving ware and other equipment
- Review mis-en-place form and communicate needs for china, glass, silver and other special equipment if needed
- Perform sanitation duties such as mopping floors, cleaning work surfaces, emptying trash containers, sweeping floors, etc.
- Maintain equipment in a professional manner and maintain a clean, safe and efficient work station
- Report equipment breakdowns and safety concerns to Manager
- Communicate with the Chef on delivery time for food and equipment needed for events
- Ensure that food and equipment are set up prior to the event based on the standard set for having receptions or buffets set up
- Inform the Chef on duty of additional food requirements, restocking of food
- Break down and return food & equipment to the assigned areas
- Ensure that all food is returned to the Chef for inspection and that all equipment is clean and stored properly
- Aid and partner with the Security department in maintaining OSHA standards
- Handle chemicals safely following all Material Safety Data Sheets (MSDS) procedures
- Absorb and maintain a thorough knowledge of current guest services, activities, dining options, shops, local attractions, and historical information regarding Sea Island and the surrounding area to answer any questions guests may have to the best of one’s ability
- If applicable, complete a Guest Problem Resolutions (GPR) form on any issues (solved or unsolved issues) and follow-up on issues as needed (if computer access is not available give information to admin support)
- Maintain cleanliness and organization in all work areas
- Uphold appropriate departmental standards of quality/timing
- Uphold and ensure compliance with all company and departmental policies and procedures
- Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately
- Attend all scheduled employee meetings and bring suggestions for improvement
- Willing and timely execution of other duties as delegated by leadership
Physical Requirements
- Ability to kneel, crouch, squat, climb, stand, sit, balance, reach, bend, push, pull and walk for prolonged periods
- If applicable, must have the ability to work for extended time periods in an outdoor environment, including sun, heat, cold, wind, rain, and higher than normal noise levels
- Ability to perform repetitive tasks with accuracy
- Ability to lift, carry, pull and push up to 50 lbs repeatedly throughout a shift
- Ability to read, write and communicate effectively in English, both written and verbal
- May be exposed to mechanical, electrical, chemical and fume hazards
- Ability to maintain compliance with Sea Island’s Company Resort Professional Image Policy
