About the role
The Director of Food & Beverage coordinates, supervises, and directs all property food and beverage operations, ensuring profitability, high-quality products, and exceptional service levels. This role involves marketing initiatives, budget management, and maintaining competitive operations.
Responsibilities
- Supervise all F&B personnel and ensure attentive, friendly, and courteous service to guests, managers, and employees.
- Respond to guest complaints in a timely manner.
- Prepare and monitor the F&B budget, including forecasting and performance tracking.
- Stay informed on industry trends and take action to maintain competitive and profitable operations.
- Collaborate with Executive Committee members and keep them informed of F&B issues.
- Coordinate and monitor Loss Prevention in the F&B department.
- Prepare and submit required reports promptly.
- Organize and conduct regular department meetings.
- Monitor service and product quality.
- Participate in menu planning and preparation.
- Ensure timely purchase of F&B items within budget.
- Oversee operations of the employee cafeteria.
- Ensure compliance with local liquor laws, health, and sanitation regulations.
- Ensure departmental compliance with Standard Operating Procedures (SOPs).
- Train department heads on SOPs, report preparation, and technical tasks.
- Interview candidates for front-of-house F&B positions and follow hiring standards.
- Attend and/or conduct required meetings, including pre- and post-convention meetings.
- Ensure overall guest satisfaction.
- Attend all hotel-required meetings and trainings.
- Participate in Manager-on-Duty (M.O.D.) coverage as required.
- Maintain regular attendance and comply with scheduling needs.
- Uphold high standards of personal appearance and grooming.
- Comply with hotel standards and regulations for safe and efficient operations.
- Identify problem areas and assist in implementing solutions to maximize productivity.
- Handle problems effectively, including anticipating, preventing, and resolving issues.
- Evaluate complex information from various sources to meet objectives.
- Maintain confidentiality of information.
- Perform other duties as requested by management.
- Maintain a warm and friendly demeanor at all times.
Requirements
- At least 6 years of progressive experience in a hotel or related field; or a 4-year college degree and at least 3 years of related experience; or a 2-year college degree and 4+ years of related experience.
- Proficiency in Windows, company-approved spreadsheets, and word processing.
- Knowledge of F&B preparation techniques, health department rules, and liquor laws.
- Ability to work long hours when required.
- Medium work capacity: Exerting up to 50 pounds of force occasionally and/or 20 pounds frequently.
- Strong verbal and written communication skills for interacting with employees and guests.
- Effective listening and clarification skills for addressing concerns.
- Ability to multitask and prioritize departmental functions to meet deadlines.
