About the Role

This position is responsible for food production within a hospital food service environment, ensuring high quality and compliance with safety and sanitation standards. The role involves planning workdays, monitoring product quality, and stepping in to lead in the absence of the Team Leader.

Education & Experience

  • High school diploma or GED equivalent
  • Four years' experience in a food service environment involving food production

Licensure & Certification

  • ServSafe Certification

Responsibilities

  • Adhere to hospital and departmental policies, promoting a cooperative work environment and demonstrating commitment to customer service through effective communication.
  • Contribute to positive patient and customer satisfaction by meeting high service and quality standards.
  • Maintain a 97% or better sanitation rating from the Health Department; maintain a double gold rating from NSF; ensure Sodexo standards are met consistently.
  • Monitor quality of product at stations, ensure recipe compliance, and meet productivity and delivery schedules, including serving line start times and batch cooking log completion.
  • Follow all workplace safety and sanitation rules and respond to corrective action plans from weekly inspections.
  • Complete required in-service, job-specific, annual Compliance/HIPAA, and TJC/OSHA training, including training in recipes, grilling, knife skills, frying, sautéing, steaming, baking, soup making, and roasting.
  • Participate in department performance improvement initiatives; work as a team player and support other Food and Nutrition Services departments as requested.
  • Minimize product waste and control costs; properly utilize and maintain equipment and supplies; follow recipes and portion control guidelines.
  • Plan workday regarding time, equipment, and quantities to ensure meals are served on time; monitor food needs based on production sheets and notify management of adjustments.
  • Prepare food according to policy using standardized recipes; maintain leftover log and waste program; complete and follow HACCP documentation and guidelines.
  • Assume Team Leader role in their absence by maintaining an orderly, sanitary work area and ensuring required documentation is completed accurately.
  • Assist Department Manager and/or Team Leader with department leadership, manage budget responsibility, minimize overtime, actively participate in Culinary Planning meetings, and participate in a minimum of two Food Safety Audits per year.

Skills & Qualifications

  • Literate in English and able to follow instructions
  • Works under general supervision, relying on experience and judgment
  • Able to orient, train, assign, and check the work of junior level employees
  • Ability to operate various cooking equipment, follow recipes, and adjust according to volume
  • Ability to withstand large temperature variances from cooking areas to freezers and coolers
  • Ability to adjust to department needs
  • Desire to achieve high customer service standards
  • Ability to communicate with a wide variety of people including patients, visitors, employees, nursing staff, managers, and hospital staff
  • Ability to step in any area on the At Your Request Line (deli, sauté & grill station, and assembly line)
  • Understanding of hospital diets (ground, chopped, and puree diets)

Work Environment

  • Ability to work weekends and holidays
  • May be required to work in all areas of Food and Nutrition Services, including kitchen and retail areas
  • Exposure to wet tile floors and dangerous, sharp equipment

Physical Requirements

  • Standing, walking, bending, reaching with arms, finger and hand dexterity, talking, hearing, seeing
  • Lifting, carrying, pushing, and/or pulling up to 100 lbs. maximum

Pay

$24.10 - $36.15 per hour

Schedule

Variable schedule; full-time, 40 hours per week
