About the role
Thompson Dallas, the Texas debut at The National, is a 52-story building with a midcentury-modern hexagon design, encompassing an entire city block. The property features 219 guestrooms (including 52 suites), two signature dining venues, 20,000 square feet of event space, a resort-style pool, custom-curated fitness facility, spa, and dog park. The Stewarding Lead oversees stewarding operations across all kitchens and food & beverage outlets, ensuring exceptional cleanliness, sanitation, organization, and operational support. This role provides day-to-day leadership to the stewarding team, promotes safety and teamwork, and partners with Culinary and Food & Beverage leadership to maintain efficient back-of-house operations.
Responsibilities
- Lead, coach, and support the stewarding team across all kitchens and food & beverage outlets.
- Oversee daily stewarding operations to ensure timely cleaning and sanitization of kitchen equipment, cookware, utensils, china, glassware, silverware, and service items.
- Maintain cleanliness and organization of all kitchens, dish rooms, storage areas, loading docks, and other back-of-house spaces.
- Coordinate daily staffing assignments and assist with scheduling, onboarding, training, and performance coaching.
- Monitor compliance with Hyatt standards and local health, sanitation, and safety regulations.
- Ensure proper handling, storage, and disposal of waste, recycling, chemicals, and cleaning supplies.
- Maintain inventory of stewarding supplies, chemicals, and equipment; communicate ordering needs to leadership.
- Inspect and maintain commercial dishwashing equipment and report maintenance concerns promptly.
- Support Culinary and Food & Beverage teams during high-volume service periods, banquets, and special events.
- Promote a safe, positive, and productive work environment while modeling Hyatt's values and service standards.
- Report to scheduled shifts, meetings, and events on time and prepared to work.
- Maintain a clean, safe, and organized work environment at all times.
- Assist leadership with deep cleaning projects and preventative sanitation initiatives.
- Safely operate commercial dishwashing, cleaning, and sanitation equipment.
- Perform other duties as assigned by management.
Qualifications
- Previous stewarding, kitchen sanitation, or dishwashing experience required.
- Previous leadership or supervisory experience preferred.
- Hotel, resort, upscale restaurant, or high-volume food service experience preferred.
- Knowledge of sanitation standards, food safety practices, and safe chemical handling procedures required.
- Food Handler Certification required at time of hire (or within the timeframe required by local regulations).
- Strong organizational, communication, and leadership skills.
- Ability to prioritize multiple tasks in a fast-paced, team-oriented environment.
- Flexibility to work mornings, evenings, weekends, and holidays as business demands require.
Physical Requirements
- Ability to stand and walk for extended periods throughout the shift.
- Frequently bend, stoop, kneel, reach, push, pull, and twist.
- Ability to lift, carry, push, and pull up to 50 pounds with or without reasonable accommodation.
- Ability to work in hot, humid, wet, and fast-paced kitchen environments.
- Manual dexterity to safely operate commercial dishwashing and cleaning equipment.
