About the Role

The Sous Chef reports to the 12 Moons Chef de Cuisine and serves as the Primary Manager in the Kitchen in their absence. Responsibilities include developing the Snoqualmie Culinary Team through hiring, training, and fostering a motivational environment. The role requires leadership, coaching, and organizational skills.

Responsibilities

  • Oversee all aspects of kitchen operations, including facility inspections, delegating tasks, and communicating facility needs.
  • Determine production needs, facilitate production, delegate tasks to lead cooks, and oversee completion.
  • Coordinate hiring needs with HR and the Chef de Cuisine.
  • Handle administrative tasks such as reports, daily logs, team member evaluations, and time/attendance monitoring.
  • Manage all kitchen operations in the absence of the Chef de Cuisine.
  • Train, coach, and lead the culinary team, including direct responsibility for training lead cooks.
  • Develop leadership within the team by example and teaching specific leadership traits.
  • Responsible for ordering, product specifications, food quality, and end-of-month inventory.
  • Maintain controls for reducing and tracking waste.
  • Perform other duties as assigned.

Requirements

  • High School Diploma, GED, Recognized Equivalent of a High School Diploma (RED), or Foreign High School Diploma (FHD).
  • Five years of culinary experience, including two years of Asian wok experience and at least two years as a Supervisor or Sous Chef. All experience must be concurrent with no significant gaps and current within six months of application.
  • Proven knowledge of proper food handling procedures.
  • Strong organizational and communication skills.
  • Proficiency in Microsoft Word, Excel, and Outlook.

Preferred Qualifications

  • Culinary Degree or ACF Certification.

Snoqualmie Casino & Hotel exercises Snoqualmie Tribal Member/Native American preference in hiring. Candidates must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission. Pre-employment drug testing is required for all positions; marijuana use will not disqualify applicants except for Transportation roles. DOT panel testing is required for Driver positions.
