About the role
Located in the heart of the iconic Park Hyatt Chicago, NoMI is a celebrated dining destination known for its refined culinary experience, exceptional service, and sweeping views of the city and Lake Michigan. As a Pastry Cook 2 at NoMI, you will be an integral part of a passionate and skilled pastry team operating within the Forbes-rated Park Hyatt Chicago. You will be responsible for executing refined pastry creations across a variety of stations — including plated desserts, breakfast pastries, breads, amenities, and banquet production — working with minimal supervision while demonstrating strong technical ability and a keen eye for detail.
Responsibilities
You will support daily mise en place and service execution and maintain high standards of cleanliness and organization. The ideal candidate will have a strong foundation in pastry arts, previous experience in fine dining or luxury hospitality, and a deep passion for craftsmanship, artistry, and continuous learning.
Requirements
- Minimum of three years of experience in a professional pastry kitchen, with previous background in a luxury hotel, fine-dining restaurant, or Forbes-rated environment strongly preferred.
- A pastry degree or equivalent hands-on training is highly advantageous.
- Proven ability to execute advanced pastry techniques including baking, laminated doughs, chocolate work, refined dessert plating, and decorative presentation, with strong ingredient knowledge and seasonal awareness.
- Ability to guide and support junior pastry colleagues, contribute to a positive team environment, and uphold consistency and high standards through proactive communication and collaboration.
- Genuine passion for creating elevated guest experiences through thoughtful and artistic pastry work, with the ability to stay calm and focused under pressure.
- Maintains a polished, respectful demeanor and demonstrates reliability, discretion, and attention to detail, reflective of a Forbes-rated kitchen environment.
- Capable of standing for long periods, lifting up to 50 lbs, and working efficiently in a high-energy, physically demanding pastry kitchen.
- Must have a flexible schedule with availability to work all shifts, weekends, and holidays, as needed to support the demands of a luxury culinary operation.

Pay
The hourly rate for this position is $28.05. This position is also eligible to earn overtime and premium pay under certain circumstances.
