About the Role

This role will be located at Atlantic Fields, set outside of Hobe Sound, FL. The Pastry Chef de Partie will take direction to innovate techniques in pastry, bakery, and presentation of the baking program and all desserts. You will be responsible for items ranging from casual dining to fine dining experiences within the club, producing the Club’s Pastry standards in desserts. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Responsibilities

  • Ensure all cleaning schedules, temperature records, opening/closing checklists are completed and recorded daily.
  • Properly transport desserts, pastries, food products, tools, and equipment to other outlets while maintaining form and presentation.
  • Set up station and plate dishes with the highest standards set by the pastry chef.
  • Communicate all shortages, prep, and ingredient inventory.
  • Complete checklists at the end of shift to ensure all ingredients and tools are properly transported each day.
  • Fill all pastry-related orders on time and to the highest standards.
  • Check pastry items at comfort stations and events to ensure quality standards are met.
  • Complete prep lists prior to the end of shift and communicate status of completion to chefs before signing out.
  • Continuously create and implement new menu ideas with the Pastry Chef.
  • Organize the kitchen and preparations efficiently to cope with daily restaurant covers.
  • Monitor inventory levels through regular checks.
  • Maintain all equipment and ensure it is properly handled, cleaned, and maintained by all culinary staff.
  • Ensure the quality of all pastry items prepared in the kitchen and follow standard recipes consistently.
  • Consistently check food for taste, temperature, and visual appeal.
  • Ensure all dishes are uniform and adhere to established portion sizes per the specifications set by the Pastry Chef.
  • Prevent the use of contaminated products in any phase of food preparation.
  • Comply with all government, safety, health, and security standards at all times.
  • Perform duties and lead on all stations including restaurant outlets, comfort stations, production, and plating.
  • Train new staff on all pastry procedures and oversee pastry cooks.
  • Perform any other duties as assigned.

Qualifications

  • At least five years of line cook or prep cook experience in large world-class resorts, hotels, and clubs.
  • At least three years of pastry cook experience in large world-class resorts, hotels, and clubs.
  • Culinary degree and pedigree preferred.
  • Experience in plated desserts and pastry production including breakfast pastries, entremets, cakes, mousses, ice cream & sorbet, tarts, various pastry doughs, bread, chocolate work, etc.
  • Knowledge of culinary and baking techniques.

  • Ability to work flexible hours/schedule including evenings, weekends, and holidays.
  • Long hours may be required due to business demands.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during busy times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet physical demands including working indoors and outdoors in all weather conditions, standing, walking, and moving for periods greater than eight hours, and lifting and carrying items sometimes greater than fifty pounds.
  • Flexibility and ability to pivot to new projects in a fast-paced environment.
