About the Role

Under the direction of the VP of Food and Beverage and Executive Chef, the candidate is responsible for overseeing all kitchen operations including menu concepts, production, management and direction of culinary staff, health and sanitation standards, product specification, and all costings for NYY Fine Dining Steakhouse. Motivates and directs staff in all aspects of performance and ensures adherence to established standards. Ensures financial profitability and returns to the Seminole Coconut Creek Casino.

Responsibilities

  • Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
  • Complete all classes offered by SGA and Coconut Creek HR department.
  • Demonstrate a commitment to responsible gaming and responsible alcohol service by discretely notifying appropriate management of concerns and observations.
  • Demonstrate actions and behaviors that reinforce the Company’s Mission and Values: Communication, Integrity, Fun, Respect, Accountability, Passion, and Dedication.
  • Ensure prompt and discrete notification to management and/or the Ethics Hotline (954-585-5103) of any observation of illegal acts or internal ethics violations.
  • Identify and define business needs and implement solutions to improve restaurant operations, customer interaction, cost reduction, or revenue generation.
  • Work with the General Manager to develop and administer controls for all phases of the restaurant in an economical and profitable manner while maintaining established standards.
  • Spearhead menu item changes based on product mix reviews and guest feedback.
  • Develop menus and specialty menus in conjunction with the chef to remain on the cutting edge of industry trends and standards.
  • Ensure the restaurant supports the casino by providing outstanding food offerings to VIP guests in the restaurant and during special events.
  • Institute cost control procedures, inventories, and standards of performance; review purchase orders and inventory levels as needed.
  • Analyze data to forecast future fiscal results as part of the budgetary process.
  • Provide project leadership and project management as assigned.
  • Act immediately on all guest complaints to ensure corrections are made wherever possible.
  • Work closely with the training department to log and track all ServSafe requirements and safety and sanitation standards.
  • Select, train, coach, counsel, appraise, and retain direct reports who consistently perform actions and behaviors aligned with the Company’s Mission and Values.
  • Protect, promote, and perpetuate the Company’s brand through policies, procedures, actions, and communications.
  • Participate in the success of the Tribal Career Development program and mentor Seminole Tribe members to prepare them for property leadership roles.
  • Perform other job-related duties as requested.

Requirements

  • Culinary degree and/or four years of progressive culinary management experience (a combination of education and experience will be considered).
  • Strong knowledge of financial information.
  • Proficiency in Excel, Word, and PowerPoint software systems.
  • Experience with POS, MMS, or other systems is strongly preferred.

Physical Demands

  • Bending, lifting over 50 pounds at a time, and standing for several hours at a time.

Work Environment

  • May be exposed to casino-related environmental factors including secondhand smoke and excessive noise.
  • Exposure to a standard kitchen environment with slippery floors, wet, cold, heat, loud noises, and dangerous equipment and sharp objects.

Background Check
