About the Role

The Licensing Manager & Corporate Paralegal manages all licensing, permitting, and regulatory compliance activities for corporately owned Twin Peaks Restaurants and provides corporate legal support. This role serves as a key liaison between the company, regulatory agencies, cities, counties, legal counsel, and internal stakeholders, supporting new store development, ongoing compliance, and corporate governance.

Responsibilities

  • Licensing & Regulatory Compliance
    • Oversee all licensing and permitting requirements across multiple jurisdictions, including alcohol licenses, health permits, business licenses, and alarm permits.
    • Manage the application, renewal, transfer, and manager change processes for all licenses and permits, including those required for special events.
    • Maintain accurate records and tracking systems for all licenses and expiration dates.
    • Serve as the primary point of contact with regulatory agencies regarding licensing and permitting issues.
  • Alcohol Compliance & Risk Management
    • Ensure compliance with all alcohol-related regulations and licensing requirements.
    • Partner with Operations and HR to support responsible alcohol service standards.
    • Support investigations and documentation related to alcohol compliance issues.
    • Monitor licensing requirements and regulatory developments across applicable jurisdictions to ensure ongoing compliance.
  • Corporate Legal Support
    • Support organization of franchise agreements, vendor contracts, leases, and other legal documentation.
    • Maintain corporate records, filings, and governance documentation.
    • Coordinate with external legal counsel on legal matters and projects.
    • Track and manage all requests for video surveillance footage.
    • Coordinate with third-party administrators to collect claim-related information.
    • File annual reports in applicable jurisdictions.
  • Compliance & Documentation Management
    • Maintain organized and up-to-date legal and licensing records.
    • Develop and implement compliance tracking systems and reporting tools.
    • Ensure documentation is audit-ready and accessible.
  • Cross-Functional Collaboration
    • Partner with Operations, HR, Development, and Finance to ensure alignment on compliance with alcohol and other licensing requirements.
    • Provide guidance to internal teams on licensing and regulatory requirements.
    • Support training initiatives related to compliance and legal processes.
    • Manage licensing and permitting timelines for new restaurant openings.
    • Partner with Development, Real Estate, and Construction teams to ensure all permits are secured prior to opening.

Requirements

  • Bachelor’s degree required; Paralegal certification or equivalent experience strongly preferred.
  • 5–8+ years of experience in licensing, regulatory compliance, or corporate legal support.
  • Experience in restaurants, hospitality, or multi-unit environments is strongly preferred.
  • Strong knowledge of alcohol licensing and regulatory requirements.
