Food Service Supervisor, Field Camp
About the role
The position of Food Service Supervisor (Field Camp) is available for the Austral Summer (Summer 2026-2027) season. The role is based at McMurdo Station, Antarctica Field Camp under the sector/department Gana-A'Yoo Services Corporation (GSC) Antarctica. Reporting to the Culinary Manager, this position oversees the production and quality of meals in a remote and challenging environment.
Responsibilities
- Responsible for overall quality, preparation, production and presentation of all food in camp.
- Maintain clean and sanitary work areas, equipment and tools in a professional manner.
- Self-motivated and able to motivate others in remote, physically challenging and atypical work environments.
- Functions as senior food services representative.
- Adapts to difficult situations and limited resources during camp set up and take down.
- Monitors water level in kitchen, assists in keeping snow for water production.
- Monitors food storage conditions and shovels excess snow as needed.
- Coordinates food pulls from cargo line and freezer cave, monitors snack items for warming huts, and monitors freezer cave access.
- Maintains wholesomeness of all food products, communicates with Sous Chefs for timely utilization of leftovers, and plans menus.
- Communicates with customers for feedback and makes adjustments to food quality, service, and menu selection.
- Conducts production meetings and menu planning meetings, monitors ingredient availability, and ensures proper labeling and dating of food.
- Maintains superior sanitation and safety standards within the kitchen, serving area, and dining area.
- Maintains waste minimization procedures and oversees proper disposal of food waste.
- Trains personnel on equipment use and cleaning.
- Makes production adjustments based on population changes and informs Sous Chefs of relevant events.
- Keeps accurate inventories of food service equipment and food items.
- Maintains morale among staff and recommends improvements to the Camp Supervisor.
- Assigns tasks and projects to personnel as needed.
- Evaluates daily food service operations and assists in all areas of the kitchen, serving, and dining areas.
- Ensures compliance with safety regulations and reports incidents.
Requirements
- High school education or GED required.
- Graduate of a culinary arts or apprenticeship program preferred.
- Five years supervisory experience in high volume food service capacity accepted in lieu of degree.
- Minimum of 7 years cooking experience, with 3 years supervisory responsibilities in high volume facilities.
- Current ServSafe Food Handler certificate required.
- Valid driver's license required.
Qualifications
- Able to stand for up to 12 hours a day.
- Able to lift safety regulation maximum from the floor to a table or cart in a safe manner.
