Responsibilities
- Utilize daily distribution sheets to check all ingredients, prepared food items, and non-food items required for the daily menu; report inaccuracies to the manager or supervisor.
- Pull items from coolers and storerooms using distribution and production sheets to meet daily meal needs with minimal disruption.
- Assemble all items needed for daily meals.
- Portion and prepare food by quantity, unit, and meal.
- Pan both hot and cold food items as needed.
- Reheat food to appropriate temperatures.
- Inspect all produced items to ensure proper panning, sealing, and visible dates.
- Check rethermed food for proper cooking using temperature checks and visual inspection; garnish food appropriately before service.
- Rotate inventory daily following first-in, first-out (FIFO) principles.
- Conduct daily physical inventory of food coolers, freezers, and storerooms.
- Read and understand special diets; serve correct foods to residents per production sheets and meal tickets.
- Follow HACCP methods for storing, heating, preparing, and cooling food.
- Monitor and record temperatures of perishable items, coolers, and storage areas to ensure safety and freshness.
- Store foods correctly, wrapping, labeling, and dating all items to preserve quality.
- Maintain food quality control by checking for damaged, leaking, or spoiled products; report issues to management.
- Report faulty equipment to management for repair or replacement.
- Comply with all federal, state, and local laws, as well as Loretto and Advanced Meal policies and procedures.
- Maintain a safe, clean, and sanitary work area; report accidents, incidents, and hazardous conditions.
- Promote and role model the mission, values, vision, and strategic goals of Loretto.
- Demonstrate excellent customer service skills and professionalism in all interactions.
- Adhere to work attendance, reliability, and ethics standards; arrive on time and prepared for shifts.
- Attend and participate in required meetings and training sessions.
- Comply with established policies, procedures, and codes of conduct.
- Practice and teach safety awareness; identify, report, or correct safety or environmental issues.
- Understand and comply with HIPAA and other regulatory requirements, including training and certifications.
Qualifications
- High School diploma, GED, or ability to pass a written TABE test.
- Prior experience in food service desired.
- Ability to read, write, and understand English.
- Ability to follow simple oral and written directions.
- Must become ServeSafe certified, Level I, at the first opportunity.
Physical Requirements
- Ability to lift boxes, cartons, and pans of food up to 50 lbs.
- Frequently stand, walk, push, pull, lift, grasp, climb, balance, stoop, kneel, crouch, reach, talk, hear, see, and perform repetitive motions.
- Ability to stand for long periods (up to 8 hours).
- Ability to perform routine cleaning.
- Ability to adapt to hot or cold environments while performing job duties.
