Executive Steward

UCLA’s Luskin Conference Center (LCC) is a 300,000-square-foot, 7-story property on campus featuring 254 guest rooms, 25,000 square feet of meeting space, a 160-seat restaurant, fitness center, and business center. The LCC supports UCLA’s education and research mission and operates as a no-tipping environment.

About the role

The Executive Steward oversees cleaning and sanitation for Plateia restaurant, Luskin Banquets, and UCLA Catering across kitchens, walk-ins, hallways, server stations, satellite kitchens, hotel break hubs, the Luskin loading dock, banquet events, and the Plateia dining room. Responsibilities include conducting health-department and UCLA-standard spot checks, developing and updating departmental policies, reporting issues to leadership, and managing dish rooms, cleaning schedules, and employee schedules. The role also involves monthly inventory reconciliation for non-food items, representing Luskin at safety meetings, and assisting with customer service, food prep, and cleaning as needed.

Responsibilities

• Oversee development, coordination, and implementation of cleaning and sanitation efforts for Plateia restaurant, Luskin Banquets, and UCLA Catering
• Conduct random and consistent spot checks to state health department and UCLA standard operating procedures
• Develop, update, and implement departmental policies
• Report issues to the executive chef and hotel manager
• Manage dish rooms, cleaning schedules, and employee schedules
• Reconcile inventory for non-food items on a monthly basis
• Represent Luskin at safety meetings
• Onboard, train, and supervise multiple supervisors and stewards (FTE, per diem, and limited appointments)
• Assist with serving customers, food preparation, cleaning, and other duties as assigned
• Operate commercial dishwashers and drive University vehicles (e.g., electric carts and trucks)

Requirements

• 3+ years of experience in an executive steward role in a high-volume restaurant, catering, or hotel food and beverage operation (Required)
• 2+ years of experience in a large-scale food and beverage operation with product and equipment storage (Required)
• 2+ years of experience in a hotel food and beverage management role (Preferred)
• Ability to effectively manage, direct, and motivate team members for high customer service and client satisfaction (Required)
• Proficiency with standard business software (e.g., Microsoft Office Suite), food service applications, and hospitality sales software (Required)
• Knowledge of sanitation and safety rules for food production, storage, and service (Required)
• Ability to read, understand, and speak English sufficient to perform job duties (Required)
• Ability to engage with diverse populations respectfully and culturally responsively (Required)
• Ability to work cooperatively as part of a team (Required)
• Ability to read, write, and perform basic calculations for safe use of commercial cleaning products (Required)
• Knowledge of inventory control principles and methods (Required)
• Ability to comply with safety standards for personal and public safety (Required)
• Excellent organizational and time management skills to plan daily work schedules (Required)
• Knowledge of commercial kitchen cleaning methods, materials, and equipment (Required)
• Valid CA noncommercial Class C driver’s license (Required)
• Must be 18 years or older
• Must work evenings, weekends, and holidays as business needs dictate (Required)

Qualifications

• Background check and Live Scan background check required prior to employment
• Subject to California DMV “Pull Notice System” for driving record
