Executive Sous Chef
About the role
As an Executive Sous Chef, you will assist in planning and executing all functions of the Food & Beverage department, ensuring efficient operation and adherence to budget limitations.
Responsibilities
- Implement effective controls of food, beverage, and labor costs
- Ensure compliance with all policies, procedures, and local, state, and federal laws/regulations
- Maintain safety of team members and cleanliness of facility and equipment
- Monitor inventory of food, beverages, and supplies to meet par requirements
- Assist in conducting monthly inventories
- Ensure the kitchen is staffed appropriately, clean, and equipment is functional
- Comply with company and franchise operational standards
- Uphold brand or company standards for food preparation and presentation
- Provide exceptional guest care with a customer service mindset
- Direct and oversee all culinary operations, including meal preparation and food quality
- Hire, train, schedule, evaluate, and coach kitchen staff
- Assist with menu and recipe development and implementation of techniques
- Ensure compliance with health, safety, sanitation, and food hygiene regulations
- Maintain relationships with health inspectors
- Communicate with front-of-house managers and back-of-house staff to ensure high service standards
- Interact with guests to assess satisfaction and address concerns
- Maintain professional relationships with team members
- Improve systems to maintain food and labor costs
Requirements
- Impeccable attendance record
- Strong time management and prioritization skills
- Thorough knowledge of restaurant operations, including food and beverage, service techniques, and health/safety regulations
- Ability to communicate in English both orally and in writing
- Capacity to create and promote a positive working environment
- Ability to work under pressure and perform well in stressful situations
- Food Handler certification
- At least 3 years of food and beverage experience
Physical Requirements
This is a physically demanding position. You must be comfortable standing, sitting, walking, bending, lifting, and squatting for extended periods.
Travel Requirements
This position requires little to no travel outside the property and surrounding area.
