About the role
The Dietary Manager oversees the Dietary Department, ensuring the preparation and serving of regular meals and therapeutic diets while maintaining sanitary conditions for equipment and areas. This role involves managing food purchases, production, and timely service, as well as supervising dietary staff.
Responsibilities
- Direct and supervise all dietary functions and personnel.
- Purchase food products from approved vendors and maintain the dietary budget.
- Hire, orient, train, counsel, and discipline dietary staff with approval from the Administrator.
- Schedule work hours and assignments, ensuring proper staffing within budget.
- Develop and enforce cleaning schedules.
- Check in and inventory incoming food orders and supplies, ensuring proper storage and compliance with guidelines.
- Process new diet orders and changes, updating the diet spreadsheet.
- Plan and assist in preparing holiday, special meals, and functions.
- Visit newly admitted residents to discuss food preferences and dining services.
- Engage with residents during meal times to discuss dining experiences and preferences.
- Participate in Department Head Meetings.
- Check meals for accuracy and presentation before serving.
- Maintain and adjust standardized recipes based on community size.
- Make necessary menu substitutions based on resident preferences and document changes.
- Collaborate with the Resident Care Coordinator to ensure diet orders are accurate.
- Inspect storage areas for proper temperatures and cleanliness.
- Regularly inspect the dietary department to ensure safety and sanitation.
- Plan and present training programs for the dietary department.
- Submit written reports to administration as needed.
- Ensure compliance with state, local, and community regulations.
- Convey and enforce State rules and regulations regarding Adult Care Home requirements.
- Be on-call for all aspects of the Dietary Department, including evenings and weekends.
- Adhere to HIPAA regulations.
- Work cooperatively with staff, residents, families, and service providers.
- Maintain positive communication with internal and external vendors and regulatory agencies.
- Report any resident, family, or staff concerns/incidents, including neglect, abuse, and exploitation, to the Administrator.
- Perform other duties as required.
Requirements
- High School Diploma or GED.
- Ability to read, write, understand, and follow directions.
- Strong written and verbal communication skills.
- Proficiency in computer skills, including electronic food order submission.
- Ability to lift, push, and pull a minimum of 75 pounds.
- No substantiated findings on the NC Personnel Registry or Health Care Program.
- Clear SBI and DMV record, maintained during employment.
- Two-step tuberculin skin test (first test prior to hire, second within two weeks of the first test).
- At least 2 years of supervisory experience.
- Basic knowledge of diets.
- Knowledge of or willingness to learn NC Sanitation Rules and Regulations.
- Knowledge of or willingness to learn NC DHSR Adult Care Home Rules and Regulations pertaining to Food Service and therapeutic diets.
- Must wear slip-resistant shoes while working in the dietary department.
- Obtain a SERV Safe Certification within 6 months of hire.
Physical Requirements
- Ability to stand and walk intermittently throughout the working day.
- Ability to reach, stoop, bend, lift, carry, and manipulate food products, supplies, and equipment.
- Ability to work with chemicals and cleaning agents.
- Ability to lift, carry, push, or pull a minimum of 75 pounds.
