Summary or Purpose
Manage the overall Senior Center Kitchen, supervises kitchen staff and kitchen activities to support the Senior Center Food Service Program.Essential Duties and Responsibilities
- Manage and supervise kitchen staff, involved in kitchen staff training and evaluation.
- Serve as supervisor of kitchen staff, ensuring cleanliness and functional operations to include food storage and dining areas.
- Inspect kitchen operations to ensure that State and Federal standards are maintained.
- Verify accuracy of all bills and purchase orders.
- Monitor food preparations methods, portion size and garnishing and presentation of food to ensure that the food is prepared and presented in acceptable manner.
- Work with Dietician to develop and implement cycle menus for kitchen.
- Ensure cooks are cooking according to menu cycle and preparing special diets and diets with nutritional restrictions correctly.
- Order food, beverages, equipment and supplies; verify product quality and quantity.
- Test cooked food by tasting and smelling to ensure palatability and flavor conformity.
- Help to ensure continued compliance with all federal and state, and local regulations.
Knowledge, Skills and Abilities
- Knowledge of Program, Department and Borough policies and procedures.
- Knowledge of proper sanitation practices and personal hygiene regulations.
- Knowledge of the principles of records management, fund accounting, and budget.
- Skill in managing a food budget.
- Skill in customer service.
- Ability to maintain professional relationships with all client, staff, and community encounters.
- Ability to keep proper inventory of food, supplies, and storage.
- Effective oral, written, and reading communication skills.
Education, Experience, Certifications and Licenses Required
- High school graduate or G.E.D.
- Two years of supervisory experience.
- Two years of work experience in food service management or related field.
- State of Alaska Food Worker card and Food Protection Manager certificate from the Alaska Department of Environmental Conservation.
- CPR and First Aid Certificates within 90 days of hire.
- Valid Alaska driver’s license that meets North Slope Borough insurance criteria.
- Documentation that the individual is free from active pulmonary tuberculosis and annually thereafter.
