About the Role
As a Cook I at Sonesta International Hotels, you will perform all basic and intermediate cooking skills, including preparation of soups, sauces, stocks, frying, and broiling. You will work on the line preparing orders and assisting with prep, ensuring high standards of cleanliness, sanitation, and food quality in a fast-paced, high-volume kitchen environment.
Responsibilities
- Prepare basic components of each dish on the menu using provided recipes.
- Memorize and utilize serving portion sizes and all basic meal prep procedures.
- Ensure the kitchen, food prep areas, and food storage areas meet restaurant cleaning standards.
- Maintain a clean and sanitary work station, including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection ovens, flat top ranges, and refrigeration equipment.
- Prepare items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating.
- Follow proper plate presentation and garnish set up for all dishes.
- Handle, store, and rotate all products properly.
- Stock and maintain sufficient levels of food products at line stations to ensure smooth service.
- Monitor product freshness and rotate out old product based on the restaurant’s schedule.
- May be required to provide direction in the supervisor’s absence.
- Build solid relationships with colleagues, treating them with respect and dignity.
- Communicate effectively with the public and other team members.
- Deliver passionate and engaging service to guests, recognizing individual needs and exceeding expectations.
- Consistently follow the GUEST model: Greet everyone warmly, use eye and ear contact, anticipate needs, solve and own requests/complaints, and thank everyone.
- Perform other duties and responsibilities as assigned, including assisting in other areas of the hotel when needed.
Requirements
- 3 years of previous line experience preferred, preferably in a high-volume kitchen.
- Culinary degree or related hotel experience is preferred.
- Ability to perform all basic and intermediate cooking skills and work multiple stations in the kitchen.
- Valid ServSafe Food Handler Certificate required.
- Strong communication skills for training, safety, and guest interactions.
- Appropriate professional appearance and demeanor.
Physical Demands
- Regularly required to stand and use hands to finger, handle, or feel.
- Frequently required to talk or hear.
- Occasionally required to walk, reach with hands and arms, stoop, kneel, crouch, or crawl.
- Must occasionally lift and/or move up to 100 pounds.
- Exposure to moving mechanical parts, extreme cold, extreme heat, and moderate noise levels.
Schedule
This is a part-time position with shifts from 3:00 PM to 11:00 PM, Thursdays through Sundays. Schedules are based on hotel and outlet needs and are subject to change.
