Role Responsibilities

  • Assists the Sous Chef and Chef de Cuisine in meal preparation, cooking, and presentation.
  • Assists the Chef with special, plate-up, sanitation, inventory, costing, and ordering tasks as assigned.
  • Oversight of dishwashing responsibilities and general cleaning throughout the day.
  • Assumes the role of the Chef in the event of a contingency.
  • Planner, overseer, and executor of production and presentation for all meals served during a service period.
  • Follows company guidelines for ordering, inventory, budget management, and collaborates with the chef and Purchasing Director on administrative tasks.
  • Creates new menu items, costing, ingredient utilization, scheduling tastings, training line cooks, and overseeing execution and writing recipe(s).
  • Maintains accurate inventories to ensure appropriate stocking levels and proper rotation of perishable food; cleans and organizes storage areas.
  • Schedules and oversees cleaning tasks for line cooks, prep cooks, dishwashers, and pastry staff.
  • Manages HACCP logs for in-house production of products requiring control logs.
  • Manages labor of all kitchen staff, including budget adherence, hiring, training, and discipline.
  • Oversees maintenance of facilities, including preventative and emergency services for equipment.
  • Participates actively in all safety meetings and implements new or existing policies.
  • Attends all scheduled meetings and brings suggestions for improvement.
  • Performs other related duties as assigned by the Chef or manager-on-duty.

Role Qualifications

  • Minimum 2 years restaurant experience required.
  • Culinary degree helpful, but not required.
  • Capacity to teach others pertinent to this role.
  • Clear communication with managers, kitchen and dining room personnel, and culinary leadership.
  • Able to reach, bend, stoop, and frequently lift up to 50 pounds.
  • Able to work in a standing position for long periods of time (up to and exceeding 12 hours).
  • Able to follow printed recipes and all directions and specifications as directed by culinary leadership.
  • Maintains high personal hygiene standards.
