About the role
The Vice President of Food & Beverage oversees and supports food and beverage strategies and activities across all F&B venues. They also provide support to ancillary revenue departments like spa, retail, and others. This role partners with both corporate and property teams to achieve desired food and beverage metrics.
Responsibilities
- Monitor and analyze each food & beverage department's financial performance and contribution to hotel profitability.
- Partner with the GM and RDO to develop strategic action plans for underperforming outlets.
- Review results monthly to develop actionable tactics for labor, food cost, beverage cost, procurement engagement, inventories, and other expense management.
- Evaluate service delivery, provide guidance and support to food and beverage teams, and provide detailed trip reports with measurable action items.
- Develop effective food preparation and cost management strategies, with emphasis on product quality and waste minimization.
- Prepare, analyze, and deliver food & beverage and ancillary metrics reports.
- Review food & beverage aspects of annual budgets, business plans, and monthly forecasts to ensure the smooth operation of the hotels and achievement of metrics.
- Focus on banquet and catering revenue generation, delivery, and profitability.
- Create processes and ensure collateral materials are within brand guidelines and meet the standard set forth by F&B marketing.
- Contribute to and support strategic development and management of career paths/succession plans.
- Develop and implement programs to train team members in procedures and techniques for effective, safe food preparation and service.
- Develop and manage a sourcing and networking plan to ensure strong knowledge of potential candidates in the various marketplaces where Parable Hospitality operates.
- Generate pro-formas for projects & concept presentations based on market specific information.
- Develop, implement food & beverage/ancillary revenue strategies that align with organizational policies and goals including due diligence for TPO's for Parable Hospitality.
- Manage the food & beverage and ancillary aspects of the Operations Critical Path for openings of new hotel locations, completing all tasks on time and on budget.

- Assist with kitchen design and capital project implementation for new and existing facilities.
- Collaborate with Operations and legal representatives to develop vendor agreements as needed.
- Manage the F&B procurement through our partners such as Food Buy and IMI.
- Establish food & Beverage requirements by studying organization plans and objectives while researching various markets.
- Represent Parable Hospitality in charitable, industry associations and educational opportunities that will lead to exposure for Parable, increased applicable knowledge, and networking for future staffing needs.
- Elevate food and beverage deliverables through partnerships with select food or beverage vendors that will solidify Parable Hospitality as a leader in this space.
- Communicate with regional and corporate leadership regarding issues, risk and liability concerns, or other important business matters.
- Operate ethically to protect the programs designed to support environmental efforts to save our planet.
- Maintain effective communication by giving direction, support, timely feedback and recognition of performance.
- Create a positive environment in which all team members can maximize their potential.
Qualifications
- 7+ years' experience in a food & beverage leadership role, ideally in a corporate environment.
- Must have held a food & beverage director position at a similar organization for 5 or more years.
Skills
- Deep understanding of restaurant, bar, and nightlife concept development.
- Experience supporting multiple business locations.
- Self-starter with an entrepreneurial spirit who is enthusiastic, energetic and personable.
- Able to travel up to 75% of the time.
- Comprehend and use technical or professional language, either written or spoken, to communicate complex ideas.
- Excellent communication and listening skills, excellent speaking, reading and writing.
- Able to effectively present information in one-on-one and large group situations to business partners and candidates.
- Multiple language abilities preferred, fluency in English required.
- Working knowledge of various software applications including but not limited to Microsoft Office Suite and POS Systems.
- Able to effectively deal with internal and external customers and staff, some of whom will require high levels of patience, tact, and diplomacy.
- Established assessment and decision-making skills with proven ability to build relationships and influence at all levels of the organization.
- Excellent time management, organizational and follow-up skills.
- Has the ability to set priorities, organize time, demonstrate initiative and work independently.
- Use logic to define problems, collect information, establish facts, draw valid conclusions, interpret information and deal with abstract variables for unique or unfamiliar situations.
