About the role
RPM Seafood is hiring a Sushi Sous Chef to join their dynamic team. This position will oversee kitchen operations, manage inventory, and ensure high-quality food preparation.
Responsibilities
- Lead BOH pre-shift meetings and participate in line, temp, and cooler checks
- Participate in food tastings for the shift
- Partner with GM and/or designated managers/chefs to review and maintain recipe books
- Perform regular line checks to ensure quality of all menu items
- Purchase and order food products and supplies for the restaurant
- Track and control food costs
- Communicate food production and timing issues, needs, and special requests between FOH and BOH
- Interview, hire, onboard, train, supervise, and develop BOH employees and teams
- Model and promote teamwork across all teams
- Respond to challenges with patience and courtesy
- Work various shifts including early mornings, late nights, and weekends
Requirements
- 2 years of sushi chef experience in a full-service restaurant
Qualifications
- Ability to lead and manage the kitchen staff
