Responsibilities
- Prepare sushi, sashimi, rolls, nigiri, otoshi courses, including cooking rice, and other Japanese dishes to a high standard.
- Ensure freshness, quality, and proper handling of all ingredients.
- Comply with Standards of Service and assist in ensuring the same from all kitchen employees.
- Contribute ideas for specials or menu development.
- Demonstrate advanced culinary technical skills required in food preparation and use of kitchen equipment for a fine-dining restaurant.
- Properly and efficiently cook all food items with high quality, taste, and presentation, including accommodating special guest requests within specified time limits.
- Responsible for final plate presentation including plating and garnishing of cooked items.
- Maintain effective working relationships with food and beverage management, staff, and all departments.
- Follow all company/kitchen safety rules, policies, and procedures.
- Present a professional appearance and remain in uniform at all times.
- Strict adherence to health department and food handling guidelines.
Requirements
- Minimum of five years previous experience as a Sushi Chef in an Omakase environment.
- Strong knife skills and knowledge of sushi techniques.
- 4-5 star background, knowledge, and ability to implement such standards.
- Good communication skills.
- Guest service-oriented with a commitment to quality service.
- Attention to detail and consistency.
- Team-oriented attitude and reliability.
- Problem-solving abilities, self-motivated, and organized.
- Food safety certification preferred (or willingness to obtain).
- Must be able to work nights, weekends, and some holidays.
