Responsibilities
- To assist the Head sushi Chef in the supervision of sushi production.
- To participate in the food production.
- To ensure the highest food quality appropriate to the market.
- To adhere to AQUA standards of food quality, preparation, recipes, and presentation.
- To supervise the proper set-up of each item on menus and insure their readiness.
- To oversee the seasonings, portions, and appearance of food service in the operation.
- To store unused food properly to minimise waste and maximise quality.
- To assist in budgetary and payroll expense control as required.
- To work closely with Chefs to ensure correct preparation and delivery times are kept and food quality is maintained.
- To assure proper safety, hygiene, and sanitation practices are followed.
- To ensure cleaning check list are signed off on a daily basis.
- To assist Head sushi Chef in checking and ordering fresh products and dry storage items required by sushi bar.
- To ensure readiness and make priorities in case of last minute changes to reservations.
- To confer closely and regularly with the Head sushi Chef.
Requirements
- Japanese Kitchen Experience

- To check the restaurant reservations regularly.
- To attend meetings and training required by the Head sushi Chef and management.
- To accept a flexible work schedule necessary for uninterrupted service to the food production function.
- To maintain own working area, materials and company property clean, tidy and in good shape; report defective materials and equipment to the Head sushi Chef.
- To be well updated on, and possess solid knowledge of the following: fire, bomb and emergency procedures, health and safety policies and procedures, current licensing relating to own department, restaurant corporate marketing and promotional programmes, restaurant guests generating high business volume, Departmental Training Standard operating procedures.
