About the role

The Steward/Potwasher/Warewasher is responsible for maintaining cleanliness and proper storage of all china, glass, and silver, ensuring the highest standards of sanitation. This role also assists the kitchen staff in maintaining the cleanliness of the kitchen and all storage areas, including cleaning equipment, utensils, and workspaces, as well as assisting with proper food storage and rotation.

Responsibilities

  • Maintain a high standard of cleanliness and orderliness in all kitchens, back dock, dumpster, and utility work areas.
  • Perform heavy-duty cleaning of ovens, grills, sinks, walls, floors, walk-in refrigerators and freezers, and other kitchen equipment.
  • Wash pots, pans, and kitchen utensils following proper sanitation procedures.
  • Vacuum carpeted areas in food and beverage outlets.
  • Sweep, mop, and wash floors in all food and beverage areas, kitchens, restaurants, and dock areas.
  • Operate dishwashing equipment to ensure thorough cleaning and sanitation of china, glass, and silver.
  • Return all clean items to their proper storage locations while minimizing breakage.
  • Know and apply safe handling techniques for all chemicals used.
  • Report faulty equipment to management immediately.
  • Empty garbage from food and beverage areas into the hotel dumpster.
  • Know the location and operation of all fire extinguishing equipment.
  • Practice safe work habits to avoid injury to self or others.
  • Follow proper procedures for breakdown, cleaning, and reassembly of kitchen equipment.
  • Adhere to all sanitation standards.
  • Assist in setting up and breaking down the restaurant buffet as required.
  • Assist Banquets by supplying china, glass, and silver as needed.
  • Keep management informed of equipment or supply shortages.

Requirements

  • High School diploma or equivalent; experience in a hotel or related field preferred.
  • Flexible and long hours may be required.
  • Heavy work: Exerting up to 100 pounds of force occasionally, 50 pounds frequently, and 20 pounds constantly to lift, carry, push, pull, or move objects.
  • Ability to stand during entire shift.
  • Ability to withstand temperature variations, both hot and cold.

  • Maintain high standards of personal appearance and grooming, including wearing the proper uniform and nametag.
  • Comply with Highgate Hotel Standards and regulations to encourage safe and efficient operations.
  • Maximize productivity, identify problem areas, and assist in implementing solutions.
  • Handle problems effectively, including anticipating, preventing, identifying, and solving issues as necessary.
  • Understand and apply complex information from various sources to meet objectives.
  • Cross-train in other hotel-related areas as needed.
  • Maintain confidentiality of information.
