Sous Chef Manager

About the Role

As the Restaurant Manager / Sous Chef, you will promote excellence in a Neiman Marcus store by building a professional team, driving top-tier guest experiences through quality food and outstanding customer service, managing catering and special events, and overseeing key restaurant initiatives.

Responsibilities

• Monitor and document daily food inventories to minimize food waste and maintain proper food costs.
• Maintain skills and knowledge for all kitchen roles to fill in as needed.
• Uphold all Health and Sanitation standards as directed by NMG, local and federal health departments, and third-party auditors.
• Check each Cook’s station daily to ensure preparation readiness for service.
• Oversee maintenance of excellent quality and cleanliness across all dining rooms and kitchens.
• Ensure adherence to Health and Safety standards in work areas.
• Drive the restaurant to achieve and maintain a 90% score or better on seasonal shop reports and sanitation evaluations.
• Maintain an up-to-date recipe book detailing specials, soups, and daily menu items.
• Work closely with front waitstaff to support smoothly-running kitchen operations.
• Create and execute all daily specials and soups by teaching designated kitchen station roles.
• Monitor, organize, and expedite all plates leaving the kitchen.
• Maintain current and accurate paperwork from POS reports while monitoring restaurant success compared to the bottom line.
• Manage inventory amounts, batch invoices, and month-end forecasts.
• Work with supervisor to order food and supplies in accordance with Corporate Purchasing Contracts.
• Monitor daily food costs to maintain planned food cost percentages.
• Ensure plating consistently meets set specifications.
• Train (or allocate training for) kitchen workers in respective areas of responsibility.
• Partner with Human Resources on coaching and counseling of kitchen Associates.
• Work closely with supervisor on catering needs for special events.
• Drive a professional and courteous environment in all dining rooms.
• Maintain an active role in front dining room procedures to ensure an efficient work environment.
• Plan, execute, and/or support special promotions and events for the restaurant.
• Maintain a professional, courteous kitchen environment (e.g., uniform upkeep, employee relations).
• Execute food and supplies orders in accordance with Corporate Purchasing Contracts.
• Maintain close, professional relationships with all restaurant vendors.
• Keep menus current by staying informed (e.g., reading cookbooks, magazines, and food journals).
• Oversee menu pricing to maintain set percentages.
• Enforce Neiman Marcus policies and procedures.
• Responsible for coaching and counseling direct reports.
• Oversee restaurant Associates in completing daily tasks.
• Provide feedback, conflict resolution, and disciplinary action for Associates.
• Work with Human Resources Manager on matters relevant to Associates (e.g., training, payroll, benefits).
• Communicate daily with the restaurant management team regarding scheduling, profit and loss reports, upcoming events, and employee-related concerns.
• Communicate effectively and daily with all culinary team members and dish crew.
• Partner with Regional Director of Restaurants to ensure the store is running smoothly.
• Provide relevant updates in weekly department manager meetings.
• Relay pertinent information and updates to restaurant staff and other department managers.

Requirements

• 4-6 years of relevant experience.
• 4-year degree preferred.
• Proven track record achieving business results.
• History of leading, motivating, and coaching teams to achieve objectives.
• Basic financial acumen.
• Excellent oral and written communication skills.
• Strong attention to detail.
• Excellent interpersonal skills with the ability to effectively advise, counsel, coach, resolve conflict, and negotiate within all levels of an organization.
• Thorough knowledge of order of service and proper placement of table settings (e.g., china, glass, flatware), food, and beverage as indicated by the kitchen ticket and guidebook.
• Exceptional customer service and problem-solving skills.

• Basic proficiency with MS Office Product Suite; advanced proficiency preferred.
• Role requires standing, bending, climbing stairs, and lifting and carrying 35 pounds.
• Willingness to work a flexible schedule based on business needs, including evenings, weekends, and holidays.

Pay

The salary for this position is between $70,915 - $88,644, with factors such as market, experience, and qualifications affecting starting pay. In higher-cost areas, the range may reflect $100,000 - $120,000.
