Sous Chef for Northwood Club

About the role
As Sous Chef, you will assist the Executive Chef in overseeing culinary operations, ensuring exceptional execution of member service for clubhouse, dining, and banquet functions. This role requires a passion for excellence in customer service, food presentation, problem resolution, and people management. You will help grow the culinary program to enhance member satisfaction while adhering to Northwood Club’s best practices and standards.
Responsibilities
- Be visible and available on the floor during meal service to support the team and membership.
- Foster a positive work environment and support team members.
- Adhere to and enforce established control procedures for cost and quality, including food production charts, par inventories, standardized recipes, use records, and food costing sheets.
- Ensure all recipes are followed consistently and maintain daily food prep lists.
- Assist with ordering all food products and assign duties to associates for efficient kitchen operations, providing training as needed.
- Support the achievement of budgetary objectives for the Food and Beverage Department.
- Ensure accurate processes and requisitions for supplies.
- Promote effective communication among operational departments interacting with the kitchen, such as banquets, restaurants, the 19th Hole, pool, and comfort station.
- Train and supervise associates in proper menu item preparation and equipment operation.
- Ensure proper receiving, storage (including temperature settings), and rotation of food products to comply with health department regulations.
- Assist in managing department members, including cooks and dishwashers.
- Submit ideas for future goals, operational improvements, and personnel management to the Executive Chef.
- Assist the Executive Chef in monitoring business volume forecasts and planning for manpower, productivity, costs, and other expenses.
- Maintain excellent service to achieve member satisfaction.
- Demonstrate flexibility to take on new tasks as directed by the Executive Chef.
- Incorporate and ensure safe work practices for yourself and your team.
- Attend staff, food and beverage, and other required meetings.
Requirements
- Minimum of 5 years of experience in a culinary management position.
- Previous experience in a platinum-level, distinguished emerald or gold club, or a high-end boutique hotel or resort.
- Manager-Level Food Handlers Certification from the City of Dallas.
- Commitment to career advancement and personal development; active participation in Northwood Club’s Leadership Development Team and Safety Committee.
- High level of organizational skills and a professional demeanor at all times.
- Strong ability to direct, communicate, and coach staff effectively in all situations.
- Intermediate-level proficiency in Microsoft Office.
- Excellent follow-up skills and extensive knowledge of food, menu creation, and high-volume kitchen management.
