Fairlane Hotel is a 79-room independent boutique property in the heart of downtown Nashville, home to a full-service restaurant and three commercial kitchens. Our culinary team takes pride in quality, consistency, and craft.
About the role
Fairlane Hotel is seeking a Sous Chef to work with the Executive Chef in overseeing daily culinary operations. This role supervises staff, manages inventory, and ensures every dish meets standards for quality, presentation, and consistency. In the Executive Chef's absence, the Sous Chef takes charge to keep the kitchen operating at the highest level.
Responsibilities
- Train, schedule, and oversee kitchen staff, ensuring compliance with food safety standards and kitchen protocols
- Act as the Executive Chef's right hand, stepping into a leadership role when needed to guide the team and maintain workflow
- Foster clear and respectful communication across kitchen and front-of-house teams
- Address issues quickly and effectively, maintaining a calm, solution-oriented approach during service
- Oversee preparation and cooking of all menu items, maintaining consistency and quality across all dishes
- Collaborate with the Executive Chef to plan menus, develop new dishes, and set pricing
- Ensure smooth daily operations, maintain kitchen equipment, and uphold cleanliness and safety standards
- Monitor inventory levels, organize supplies, place orders with vendors, and manage food costs effectively
Requirements
- Proven experience as a Sous Chef or in a similar leadership role in a professional kitchen
- Strong culinary skills and knowledge of diverse cooking techniques and styles
- Excellent leadership and team management abilities; effective, collaborative communicator
- Familiarity with inventory systems and food cost management
- Ability to stand for long periods in a hot, fast-paced kitchen; lift up to 35 lbs occasionally
Qualifications
- Culinary degree or formal training (preferred)
Schedule
On-property position with varying shifts, including evenings, weekends, and holidays.
