About the Role
This role provides leadership for the daily food service operation at the Bronx Zoo, ensuring all standards of planning and executing production are met. The Sous Chef assists in the supervision of staff, inventory and cost controls, kitchen cleanliness, equipment maintenance, and overall guest service.
Responsibilities
- Assist the Executive Chef with menu planning, food purchasing, and food transportation throughout the Zoo.
- Manage overall kitchen expenses by controlling food and supplies inventory and limiting product waste.
- Oversee the preparation, production, and presentation of food products for restaurants and catered events.
- Interview, select, train, schedule, coach, and support associates to ensure performance aligns with established standards.
- Update costs for recipes and maintain the menu database.
- Maintain food safety standards in accordance with NYC Department of Health and internal compliance requirements.
- Follow sustainability guidelines set by WCS’s Business Operations leadership.
- Communicate with the Executive Chef and culinary team to address staff, product, or process issues.
- Perform additional responsibilities as directed by the Executive Chef.
Requirements
- Three years’ experience in a managerial position at a high-volume food service establishment (preferred).
- Culinary degree or certification from an accredited program (preferred).
- NYC food handlers’ certificate and/or ServSafe certification (may be required post-hire).
- Proficiency with Microsoft Office.
- Strong leadership, communication, and problem-solving skills.
- Valid driver’s license.
Physical Demands
- Constant use of keyboard, mouse, and finger manipulation (e.g., 10-key, handwriting).
- Constant wrist turning, telephone use, and neck motion.
- Frequent sitting (with ability to stand at will) and occasional standing at counters.
- Constant walking and occasional stair climbing.
- Occasional driving.
- Constant lifting and carrying of items weighing 0–50 lbs.
Workplace Conditions
- Hours may extend or vary, including nights, weekends, and holidays.
- Must be able to maneuver between simultaneous functions in a fast-paced environment.
- Constant work inside, often in close proximity to others, with exposure to excess noise.
Pay
$68,000 – $72,000 per year.
