Sous Chef
About the role
Mandarin Oriental New York is seeking a Sous Chef to join their Culinary team. The ideal candidate will have a minimum of 5 years of experience in luxury hotel culinary, with at least two years of management experience in high volume or fine dining establishments. They should also have experience in a union environment and a background in multi-cultural cuisines.
Responsibilities
- Prepare meals according to quality, availability, and seasonality, ensuring market lists are completed daily and weekly.
- Assist and coordinate menu planning and implementation, ensuring food standards and presentation are maintained and continually improved.
- Organize food production in a cost-effective and hygienic manner, generating weekly schedules for kitchen colleagues and assisting in recruitment, training, coaching, and corrective actions.
- Lead training related to Food and Labor Cost Goals, developing standard procedures and controlling efforts to achieve these goals.
- Control food costs by liaising with the Purchasing Department to check prices, market fluctuations, quality, etc., and constantly strive to improve operating procedures.
