Sous Chef

About the role

As a Sous Chef at Fleming’s Prime Steakhouse & Wine Bar, you will be the key to fulfilling the promise of a memorable celebration of food, wine, and personalized service. You will help create an inclusive, supportive environment, develop kitchen associates, and uphold high standards of quality, safety, and sanitation while driving restaurant results.

Responsibilities

• Maintain high‑quality employee standards by helping staff a fully staffed kitchen, fostering an inclusive environment, developing associates, and holding the team accountable constructively.
• Implement effective security protocols to ensure the safety of employees and guests.
• Supervise set‑up and food production areas to maximize productivity and minimize waste.
• Conduct line checks, testing, training, ensure recipe adherence, manage expo, monitor cook times, and oversee cooking processes.
• Present quality food by ensuring all menu items are prepared according to recipe and meet presentation standards.
• Enforce safety and sanitation practices, maintaining immaculate facilities.
• Live the company’s Principles & Beliefs, serving as a role model and fostering a passionate, fun culture.

Requirements

• Minimum of 2 years prior kitchen supervisory or kitchen management experience.
• Minimum of 2 years of polished casual or fine‑dining experience (preferred).
• Availability to work a flexible schedule.
• Legal authorization to work in the United States.
• Must be at least 21 years of age.
• Basic computer proficiency (preferred).

Compensation

Compensation varies by location, based on a 45‑hour work week (40 hours of regular time and 5 hours of overtime).
