Responsibilities
- Responsible for establishing pars, keeping order guides updated and all ordering.
- Aids the executive chef in monthly inventory.
- Knows the budget for purchases, sales and labor and assists in meeting budget standards.
- Writes and updates prep lists.
- Oversees prep and line cooks, ensuring they adhere to recipe standards.
- Assists the executive chef with progressive discipline, one-on-one meetings, and performance/station reviews.
- Identifies gaps in the schedule, develops and implements new hire and training plans for all new employees.
- Updates and oversees the execution of daily AM and PM line checks.
- Keeps prep books updated with current recipes.
- Trains cooks with any menu changes.
- Ensures temperature logs are current and up-to-date.
- Audits ticket times at random and develops a plan for corrective action when necessary.
- Develops and oversees daily, weekly, and monthly cleaning plans.
- Maintains repairs and maintenance logs.
- Passes on food knowledge to the front-of-house staff during daily pre-shifts and meetings.
- Assists the executive chef with daily specials and weekly food plans.
- Serv Safe, Allergy, and Choke Safer certifications are up to date.
- Trimark Inventory and Ordering.
