About the role
The Sous Chef assists in developing menus and concepts according to the type of outlet and reports directly to the outlet Restaurant Chef.
Responsibilities
- Creates and ensures a fresh, positive, and exciting environment where sanitation, flawless delivery, and execution of product excellence and service are paramount
- Works with the Stewarding Department to assure all cleaning and deep cleaning schedules are followed
- Manages service cleanliness and the dining room floor
- Applies acquired knowledge of sanitation according to state and federal guidelines
- Works efficiently and accurately before, during, and after service; maintains thorough knowledge of Safety and OSHA guidelines
- Follows and maintains documentation according to all HACCP guidelines; sets up HACCP flow chart built into production guidelines
- Manages food and labor costs
- Completes paperwork, daily and weekly reports, menu analysis, and ordering products
- Trains all employees; prepares weekly schedules; develops and implements employee training programs
- Inspects equipment and assures preventative maintenance is in effect
- Follows and adheres to all company and departmental safety guidelines
Essential Functions
- Periodically pushes and pulls heavy carts and lifts products in proper storage areas
- Works in environments with varying temperatures, from hot to cold areas
- Periodically tastes and evaluates the quality of food products
- Required to be detail-oriented
- Exposure to casino-related environmental factors including secondhand smoke, excessive noise, and stress related to servicing customers in a high-pressure, fast-paced environment
- Must be able to work holidays, weekends, flexible shifts, and/or unusual hours
- Must be able to stand for an entire shift and move throughout the hotel
- Must be able to lift up to 55 lbs and push up to 50 lbs
Requirements
- Four years of culinary experience; two years of supervisory experience
- Ability to communicate effectively with a diverse work staff
- Excellent guest relations skills
- Proficient in all computer and software applications
- Ability to effectively communicate in English
- ServSafe certified
- Experience with Excel, Word, and Agilysys MMS System software programs

Pay
Our cash compensation amount for this role is $53,500–$69,600. Final offer amounts are determined by multiple factors including experience and expertise and may vary from the amount listed above.
