About the role
The successful candidate will lead the seafood department crew, manage training processes, and ensure smooth operation of seafood, meat, and chef express products.
Responsibilities
- Plans and assigns work, conducts performance evaluations, coaches, administers discipline, provides training, rewards crew members, addresses complaints, resolves issues.
- Trains and mentors seafood department crew members to demonstrate, educate, and sell fresh seafood and other products.
- Manages training for new seafood crew members, completes onboarding activities, and oversees department-specific training on the in-house Learning Management System (LMS).
- Writes and places orders for ingredients, products, and supplies, checks orders upon receipt, stocks and organizes dry storage, freezers, and coolers.
- Prepares seafood, service meat, and chef express products for sale by filleting, wrapping, and pricing according to department and company policies.
- Writes daily plans and weekly schedules to meet business needs, controls inventory, ensures compliance with FIFO principles, and maintains displays to meet freshness guarantees.
- Coordinates seafood programs and corporate promotions, works with the Seafood Sales Manager on product selection and mix.
- Controls inventory, maintains accurate records for damaged/spoiled merchandise, complies with food and workplace safety rules, and ensures a clean, safe work environment.
- Communicates sales goals and guest service expectations to seafood department crew members during daily team huddles.
- Works collaboratively in a team-oriented environment, responds to guest inquiries, and stays informed about specials and promotions.
- Performs physical activities such as lifting, standing, walking, bending, twisting, reaching, fingering, pushing, pulling, sitting, and uses various tools and equipment.
- Complies with personal protective equipment and cleaning supplies requirements.
Qualifications
- 2 years of department operations experience or equivalent education to understand all positions within the department.
- Knowledge of fundamental management concepts, practices, and procedures related to food service, merchandising, and retail operations.
- Ability to learn and evaluate seafood, chef express, beef, pork, and poultry products.
- Strong work ethic, effective time management, and ability to follow instructions and procedures for handling knives and other cutting equipment.
- Comprehension, interpretation, and analysis of instructions, correspondence, government regulations, financial reports, legal documents, packing lists, manifests, pick sheets/fulfillment orders, inventory count sheets, movement/volume reports.
- Math skills necessary, including adding, subtracting, multiplying, and dividing, following recipes, gross margins, markup, percentages, analyzing variance, completing reports, budgeting labor and sales, completing sales transactions, and calculating discounts.
- Ability to use Microsoft Office suite and excellent communication skills, including interacting professionally and courteously with guests, crew members, store management, corporate sales managers, and leadership.
Physical Demands
- Lifting (25-50 lbs. routinely), standing/walking, bending, twisting, reaching, fingering, pushing/pulling, sitting.
- Uses various tools and equipment: knives, wrapper, box knife, seafood scale, label machine, computer, printer, telephone, shopping cart, garbage compactor, bailer, pallet jack, flat bed, hand truck, ladder, calculator, mop, broom, floor squeegee.
- Uses cleaning supplies: hand soap, hand sanitizer, glass and multi-surface cleaner, floor degreaser, bio-shield drain treatment, food grade lubricant, quaternary sanitizer.
- Wears personal protective equipment: cut-resistant gloves, heavy cotton gloves.
Work Environment
- Primarily in open department with sales counter and preparation area, exposure to ice/wet areas, freezers, and refrigerated areas.
- Required to join a labor union.
