Responsibilities
- Understand trim specifications
- Style to customer specifications
- Maintain style pace to labor standards
- Identify all retail beef or pork product specifications
- Identify all retail beef or pork packaging specifications
- Understand grade, enhancement, ascorbic acid requirements
- Understand Food Safety, GMP, and SSOP requirements
- Maintain product flow and procedures
- Understand muscle orientation and different primals
- Understand production schedule and rotation of items
- Understand table position rotation/assignment based on production schedule
- Perform tasks such as cutting meat, packaging, and product presentation
Work Environment
- Cold, wet, damp environment
- Standing for prolonged periods of time
- Uneven walking surfaces and slippery floors
Qualifications
- Solid work history; previous manufacturing or food processing experience preferred
- Eye for detail and a passion for quality
- Willingness to work in a fast-paced, cold environment performing repetitive work
- Excellent communication skills
