Responsibilities
- Work closely with other chefs to ensure consistency and quality
- Support and guide Pastry Cooks on the pastry section
- Maintain high standards of food safety and cleanliness
- Manage mise en place and section organization efficiently
- Prepare and present desserts to Hawksmoor standards
- Ensure full knowledge of product provenance and supplier partnerships; ensure only the highest quality ingredients are received and used
- Show genuine care and ownership in delivering an exceptional guest experience
- Understand CSI metrics and how the kitchen impacts them
- Ensure all recipes are executed precisely and consistently, upholding Hawksmoor’s uncompromising standards
Qualifications
- Proven experience as a Pastry Sous Chef
- Strong knowledge of pastry techniques and product knowledge
- Ability to manage a team and train new starters
- Experience with kitchen operations and financial performance management
- Understanding of health and safety regulations and compliance
- Knowledge of sustainable practices and ingredient sourcing
