Pastry Sous Chef

Responsibilities

  • Work closely with other chefs to ensure consistency and quality
  • Support and guide Pastry Cooks on the pastry section
  • Maintain high standards of food safety and cleanliness
  • Manage mise en place and section organization efficiently
  • Prepare and present desserts to Hawksmoor standards
  • Ensure full knowledge of product provenance and supplier partnerships; ensure only the highest quality ingredients are received and used
  • Show genuine care and ownership in delivering an exceptional guest experience
  • Understand CSI metrics and how the kitchen impacts them
  • Ensure all recipes are executed precisely and consistently, upholding Hawksmoor’s uncompromising standards

Qualifications

  • Proven experience as a Pastry Sous Chef
  • Strong knowledge of pastry techniques and product knowledge
  • Ability to manage a team and train new starters
  • Experience with kitchen operations and financial performance management
  • Understanding of health and safety regulations and compliance
  • Knowledge of sustainable practices and ingredient sourcing
