About the role

The Four Seasons Resort Lāna’i seeks a Pastry Cook I who embodies a passion for excellence and brings enthusiasm to their work. This role involves shaping the guest experience by providing exceptional knowledge of the Resort and embodying the Golden Rule in interactions.

Responsibilities

  • Coordinate the selection, training, and development of employees in the pastry shop and Bakery.
  • Assist in the planning and development of recipes and ensure the correct preparation and presentation of food items.
  • Prepare baked goods including breads, breakfast pastries, and other bakery items.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
  • Maintain sanitation standards and ensure the cleanliness and organization of the kitchen.
  • Monitor food shipments to ensure they meet established purchasing specifications and foster an awareness of food preparation and quality.
  • Communicate with employees to meet operational needs and attend regular operational meetings for effective coordination and cooperation between departments.

Requirements

  • Work authorization required in the United States.
  • Ability to stand for extended periods, lift up to 50 lbs, and perform tasks requiring pushing and pulling.
  • Weekend and holiday availability required.
  • Solid knowledge of Pastry and Bakery, experience in chocolates and sugar works, and experience in lamination process, artisan breads, and healthy bread programs.
  • Creativity and flair, and the ability to provide guidance to others.
  • Good business acumen and strong work ethic.
  • 2+ years kitchen supervisory experience with a diversity of culinary experience and a proven track record in a pastry shop and multiple outlets.

Qualifications

  • Ability to obtain a Tuberculous (TB) clearance card as required by the Hawaii State Department of Health.
  • Strong culinary skills and creativity.
  • Proven track record in a pastry shop and multiple outlets.
