Set within one of California’s most iconic luxury resort destinations, Alila Ventana Big Sur offers a deeply personal and elevated guest experience rooted in nature, wellness, cuisine, and thoughtful hospitality. The Director of Outlets must understand the expectations of a luxury resort environment and bring strong leadership across fine dining, elevated beverage service, resort outlets, and banquet or special event operations.
Responsibilities
- Lead daily operations for resort food and beverage outlets, including restaurant, bar, lounge, in-room dining, pool or outdoor dining experiences, and other assigned outlet areas.
- Oversee fine dining service standards, ensuring polished execution, elevated presentation, thoughtful pacing, and personalized guest engagement.
- Partner closely with culinary leadership to support menu execution, seasonal programming, tasting experiences, wine pairings, special events, and guest-facing culinary activations.
- Maintain a strong floor presence during peak meal periods, VIP experiences, special events, and high-volume resort activity.
- Lead, coach, train, and develop outlet managers, supervisors, servers, bartenders, hosts, server assistants, and other food and beverage colleagues.
- Support refined service training, including luxury hospitality standards, sequence of service, menu knowledge, wine and beverage education, storytelling, and guest personalization.
- Oversee restaurant and bar operations with focus on guest satisfaction, colleague engagement, service consistency, cleanliness, ambience, and financial performance.
- Support banquet and special event operations as needed, including private dining, receptions, weddings, executive events, group dining, buyouts, and resort activations.
- Partner with Events, Culinary, Sales, Stewarding, Spa, Rooms, Engineering, and Resort leadership to ensure seamless communication and execution.
- Review BEOs, group resumes, special requests, dietary restrictions, VIP notes, and event details to ensure outlet and banquet readiness.
- Monitor guest feedback, service scores, online reviews, and operational trends to identify opportunities for improvement.
- Resolve guest concerns professionally and ensure timely service recovery and follow-up.
- Manage labor, scheduling, payroll review, productivity, cost controls, supplies, inventories, and operating expenses.
- Support revenue generation through beverage programming, menu enhancements, upselling, private dining opportunities, and guest experience activations.
- Ensure compliance with food safety, sanitation, responsible alcohol service, health department requirements, resort policies, and safety standards.
- Maintain high standards for outlet presentation, uniforms, grooming, equipment, table settings, service stations, and back-of-house organization.
- Promote a positive, professional, inclusive, and accountable team culture.
- Act as a senior food and beverage leader and represent the resort with professionalism, discretion, and care.
Qualifications
- Previous food and beverage leadership experience required.
- Previous experience in a luxury resort, destination resort, full-service resort, boutique luxury property, or high-end hospitality environment strongly preferred.
- Fine dining restaurant leadership experience required.
- Banquet, private dining, wedding, catering, or special event experience strongly preferred.
- Strong understanding of luxury service standards, elevated dining, beverage service, guest personalization, and resort operations.
- Previous experience leading restaurant, bar, in-room dining, and/or multi-outlet food and beverage operations preferred.
- Demonstrated ability to lead, train, motivate, and develop managers, supervisors, and hourly colleagues.
- Strong financial acumen, including labor management, forecasting, revenue generation, cost controls, inventory, and P&L awareness.
- Excellent communication, organization, problem-solving, and decision-making skills.
- Ability to partner effectively with culinary, events, rooms, spa, sales, stewarding, and resort operations teams.
- Knowledge of wine, spirits, cocktails, menu development, food trends, and luxury guest expectations preferred.
- Experience with point-of-sale systems, scheduling systems, payroll systems, guest feedback platforms, and Microsoft Office preferred.
- Knowledge of food safety, sanitation, responsible alcohol service, and applicable local regulations required.
- Must be able to work a flexible schedule, including mornings, evenings, weekends, holidays, and business-demand periods.

Pay
This is a salaried position with a compensation ranging from $100,000-$115,000.
