About the role

The Food & Beverage / Events Banquet Captain provides administrative and operational support to the Food & Beverage (F&B) Department and assists the Events Department with leads, contracts, and execution. This role ensures a personable, unique, and indulgent guest experience for event inquiries while maintaining the highest standards of quality. The position requires conflict resolution skills, a thorough understanding of Bunkhouse policies, and a commitment to upholding the company’s culture, values, and reputation.

Responsibilities

  • Oversee banquet function activities to meet client expectations and hotel standards in appearance, set-up, service, and food quality.
  • Coach servers, bartenders, and bussers to ensure adherence to client and hotel standards.
  • Anticipate guests’ needs, respond promptly, and acknowledge all guests regardless of time or business level.
  • Maintain complete knowledge of and enforce all departmental policies, service procedures, and standards.
  • Review the Banquet Execution Order (BEO) with the sales team before each event.
  • Pull and return liquor, beer, and wine for events, completing consumption sheets for the sales team.
  • Write and provide event staff with a Run of Show detailing all pertinent event information.
  • Coordinate with the Chef and kitchen staff to align timing for food and client requests.
  • Inspect event spaces to ensure operational equipment and report any issues to the appropriate department.
  • Maintain constant communication with clients, resolve guest complaints, and ensure guest satisfaction.
  • Oversee event closing procedures, ensuring all protocols are executed and closing reports are completed.
  • Attend relevant meetings.
  • Perform additional duties as needed to meet operational demands and exceed customer expectations.

Requirements

  • TABC and ServeSafe certifications required.
  • High School diploma or GED; College Degree preferred.
  • Two (2) years of related experience in hospitality events or the events industry.
  • Ability to prioritize, organize, and work independently with good judgment.
  • Flexibility to adapt to changing schedule requirements (e.g., late nights to early mornings) with consistent attention to detail, speed, and accuracy under variable conditions (temperature, noise levels, indoor/outdoor settings).
