Responsibilities
- Prepare and cook menu items to recipe standards for lunch cruises, dinner cruises, weddings, and special events
- Set up, stock, maintain, and break down assigned kitchen stations
- Prepare ingredients including vegetables, sauces, stocks, and desserts
- Maintain cleanliness and sanitation in accordance with health department and maritime standards
- Follow FIFO, proper labeling, dating, and safe food-handling procedures
- Clean and maintain kitchen equipment, surfaces, and storage areas
- Communicate with kitchen leadership and service teams to ensure timely, accurate meal delivery
- Receive and store deliveries; monitor inventory and report shortages
- Support vessel operations and partner with other departments as needed
- Perform additional duties as assigned by culinary leadership
Requirements
- 2-3 years of cooking experience in high-volume restaurants, catering, or banquet environments
- Strong working knowledge of food preparation, cooking techniques, and sanitation practices
- Ability to work efficiently in fast-paced, space-constrained galley conditions
- Strong communication skills and a collaborative, professional mindset
- Comfortable working aboard vessels in tight spaces and dynamic environments
- Ability to follow detailed recipes, procedures, and safety expectations
- Prior banquet or event-based cooking experience strongly preferred
- Availability to work evenings, weekends, holidays, and extended shifts as needed
- Ability to work onboard for 2–5 hour cruises; occasional extended shifts up to 12 hours
