About the Role

The Mixer is responsible for ensuring that all mixes and grinds meet acceptable quality, yield standards, and align with the production schedule. This role oversees ingredient and material accuracy based on product specifications, prepares batches according to guidelines, and maintains accurate reporting and documentation of the mixing process.

Responsibilities

  • Food Safety & Safety:
    • Perform tasks according to Safety and Food Safety Standards.
    • Participate in safety training programs and contribute to safety initiatives.
    • Ensure compliance with regulatory requirements (SQF, GMP, HACCP, OSHA) and company policies related to food safety, sanitation, and environmental regulations (e.g., Food Fraud/Defense, Allergens, Organic, Gluten-Free).
    • Report equipment malfunctions and ensure the preventive maintenance program meets production needs.
    • Follow Lockout-Tagout (LOTO) procedures.
    • Follow the production schedule, complete efficient product changeovers, and promote teamwork.
    • Maintain a clean, safe, and organized work area.
    • Comply with all SQF requirements and maintain workstations per SQF guidelines.
    • Follow Company rules, policies, and procedures.
  • Mixer (Flour):
    • Identify and understand batch preparation requirements using appropriate recipes.
    • Follow recipes and instructions for preparing dough based on product specifications and quantities.
    • Verify ingredient accuracy prior to mixing.
    • Coordinate with the machine operator to confirm the correct dough consistency for the first mix of every product.
    • Ensure all mixes meet quality and yield standards in line with the production schedule.
    • Monitor temperature, pressure, appearance, and physical changes during the process.
    • Report deficiencies to the department lead and/or supervisor.
    • Maintain records and document data (mixing, temperatures, etc.).
    • Use an RF gun for ingredient consumption and maintain records of mixes and ingredient usage on TGI work orders.
    • Maintain constant communication with the machine operator, including coordinating lunches and breaks.
    • Troubleshoot and resolve problems proactively.
    • Ensure equipment is maintained in top operating condition, cleaned, and sanitized.
    • Maintain the mixing room organized and audit-ready.
  • Grinder:
    • Prepare equipment for grinding.
    • Change grinder stones as indicated by frequency.
    • Verify planning and scheduling.
    • Inspect corn quality before grinding (pH and humidity).
    • Ensure masa meets texture standards required by the recipe.
    • Weigh masa per recipe standards.
    • Enter information into the TGI system.
    • Complete changes of preservative tanks when they finish.
  • Corn Mixer:
    • Prepare mixes using the appropriate recipe and specifications.
    • Guarantee all mixes follow required quality standards.
    • Verify all ingredients are scanned in the TGI system.
    • Ensure ingredients follow the FIFO (First-In, First-Out) program.
    • Meet machinery performance standards and ensure waste standards are not exceeded.
    • Report deficiencies to the department supervisor after product changeovers.
    • Maintain communication with the machine operator regarding changes in texture, color, or smell of masa.
    • Complete proper documentation of production reports (mixes, temperatures, lot numbers, etc.).
  • Perform other duties as assigned.

Requirements

  • Education/Certifications and Experience:
    • Grade School level; High School Diploma/GED a plus.
    • 1-2 years’ experience operating or working with food manufacturing machinery or similar experience.
    • 1-2 years’ experience following work task specifications, SOPs, recipes, etc.
  • Knowledge, Skills, and Abilities:
    • Proficient communication skills (verbal and written).
    • Proficient in basic math skills and calculator use.
    • Basic computer skills.
    • Proficient analytical and problem-solving skills.
    • Ability to train, coach, and motivate co-workers.
    • Team player with self-motivation to correct deficiencies.
    • Ability to lift, push, pull, and carry up to 50 lbs.
    • Ability to stand for prolonged periods, bend, stoop, crawl, reach, grasp, and work in adverse or awkward positions.
    • Reliable, punctual, and flexible with scheduling, including weekends, holidays, and off-shifts.
    • Compliance with company attendance and punctuality policy.
    • Ability to fulfill essential job functions in a consistent state of alertness and safe manner.
    • Adherence to a drug and alcohol zero-tolerance policy.
    • Compliance with all food safety and third-party certification policies (SQF, Gluten-Free, Organic, etc.).

Working Conditions

  • Continual walking and standing on hard surfaces, climbing, and descending steps.
  • Frequent bending, kneeling, squatting, stooping, reaching, pulling, pushing, and lifting up to 50 lbs.
  • Exposure to rotating and reciprocating parts.
  • Operation of industrial equipment such as pallet jacks.
  • Exposure to cool, hot temperatures, and noise.
  • Ability to stand for long periods in warm conditions with loud equipment noise.
