Meat Cutter

About the Role

Cuts, trims, and prepares raw meat for sale using saws, knives, grinders, and tenderizers. Provides a high level of member service.

Responsibilities

• Cuts and trims meat to Costco specification using band saw and knives.
• Operates tenderizing machine.
• Transfers cut and ground meat to styrofoam trays, loads them onto large plastic trays, and transfers to a wheeled rack for wrappers.
• Assists with wrapping tasks, including re-wrapping fish.
• Stocks meat display case according to the Meat Manager’s plan for product presentation and merchandising.
• Brings cases of meat (up to 99 lbs) from the cooler and empties contents onto the meat cutting or preparation area.
• Re-stocks meat room supplies and boxes of meat (up to 99 lbs).
• Inspects and reassembles equipment sanitized the previous night.
• Reworks display case to assess daily production needs and rotates product.
• Operates meat grinder, checks fat content of each batch, and follows proper department production procedures for quality and consistency.
• Cleans and sanitizes the area throughout the day, ensuring compliance with health code standards, including sanitation and temperature maintenance.
• Restocks meat room supplies such as sanitizer and styro trays.
• Performs routine maintenance for machinery, equipment, and implements.
• Provides prompt and courteous member service.
• Ensures proper cleanup and disposal of hazardous materials.
• Assists with department duties and in other warehouse departments as necessary.

Qualifications

• Ability to operate vehicles, equipment, or machinery.
• Open availability to meet business needs, apart from religious or disability considerations.
• Authorization to work in the United States.
