Guy Fieri’s Smokehouse, a new dining concept from the award-winning chef, restaurateur, author, and TV personality, is opening at Fourth Street Live! Inspired by Guy Fieri’s induction into the American Royal BBQ Hall of Fame in 2012, this flagship location features 6,700 square feet of dining space, a 2,200 square foot outdoor patio, a custom Ole Hickory smoker, and two bars.
Responsibilities
- Ensure compliance with standards of service and operating procedures.
- Adhere to federal, state, and local regulations concerning health, safety, or other compliance requirements.
- Supervise day-to-day activities of one or more food and/or beverage outlets or assigned portions of the operation.
- Plan and organize work, communicate and enforce policies and procedures.
- Recommend and/or initiate salary, disciplinary, or other staffing-related actions in accordance with company rules and policies.
- Alert management of potentially serious issues.
- Ensure all staff is properly trained, certified, and equipped to carry out their job functions.
- Greet guests upon arrival and respond appropriately to guest complaints.
- Establish and implement service recovery guidelines to ensure total guest satisfaction.
- Assist with creating innovative programs and promotions to market special menu items, increase sales, and boost guest patronage.
- Assist in the development and implementation of new menus and local food and beverage marketing programs.
- Monitor restaurant performance through guest feedback and financial results; initiate corrective action as needed.
- Maintain procedures to ensure security and proper storage of inventory, equipment, monies, and financial transactions.
- Replenish supplies, inventory, and uniforms in a timely and efficient manner while minimizing waste and controlling costs.
- Participate in taking inventories.
- Achieve budgeted revenues, control expenses and labor costs, and maximize profitability.
- Assist in preparation of the annual operating budget.
- Ensure all restaurant equipment is in proper operational condition and cleaned regularly.
- Ensure restaurant facilities are cleaned, vacuumed, and properly stocked according to anticipated business volumes.
- Coordinate special events scheduled for the venue.
Qualifications
- High school diploma or equivalent and at least 1–2 years of restaurant management experience in a full-service restaurant, nightclub, or similar setting.
- Hospitality Management Degree or some college preferred.
- Must speak fluent English; other languages preferred.
Skills
- Strong communication skills for interacting with guests, employees, and third parties.
- Reading and writing abilities for completing paperwork, management reports, and instructions.
- Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances.
- Problem-solving, reasoning, motivating, organizational, and training abilities.
- Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government.
- Ability to lift and carry items weighing up to 75 pounds.
- Ability to move about the outlet(s) safely and efficiently, handle food and utensils, and perform tasks requiring bending, stooping, and kneeling.
Schedule
- May be required to work nights, weekends, and/or holidays.
