At Great Wolf, the Food & Beverage Manager understands and leads the daily operations of multiple F&B areas, ensuring guest satisfaction, staff engagement, safety, and profitability initiatives are achieved within the lodge environment.
Responsibilities
- Oversee and take ownership of the daily functions of the lodge restaurant, bar, quick-service outlets, and banquet operations per brand guidelines, completing all tasks necessary to achieve monthly KPI goals.
- Ensure all areas are strategically prepared for timely, thorough, and profitable guest service interactions.
- Assist F&B leadership in achieving operational objectives by contributing to strategic plans, preparing action plans, implementing production and quality standards, resolving problems, and identifying system improvements.
- Actively participate in hiring, training, scheduling, coaching, and counseling team members; communicate job expectations and enforce policies consistent with the Great Wolf Lodge Handbook.
- Ensure compliance with Pack Member training courses in Great Wolf University.
- Support frontline staff in anticipating and attending to guests' needs to ensure maximum satisfaction.
- Supervise the preparation, presentation, and timeliness of all foods and beverages in all lodge venues, ensuring items meet recipe guidelines and flavor, quality, speed, and service standards.
- Assist in functional areas during peak demand times, including guest-facing roles in restaurants, bars, quick-service outlets, and banquets.
- Partner with Culinary and Purchasing Teams to maintain storeroom, cooler, and freezer organization, adhering to par levels and health code requirements, including First-in/First-out protocols.
- Control cost of goods sold through regular review of portion control, preparation quantities, and waste minimization activities.
- Ensure strict adherence to food handling, cleanliness, sanitation, organization, and maintenance standards, coinciding with daily/weekly/monthly cleaning schedules and internal safety audits.
- Work with F&B Leaders and HR to ensure timely and accurate execution of scheduling and payroll activities.
- Monitor equipment operation, perform preventative maintenance, troubleshoot breakdowns, and maintain supplies.
- Participate in weekly/monthly inventory procedures to ensure budgeted controllable costs are not exceeded.
- Conduct department pre-shift meetings and service audits; course-correct service components to ensure guest satisfaction and company standards are met.
- Ensure the lodge complies with all minimum score goals for scheduled and non-scheduled safety inspections.
Requirements
- High School diploma or equivalent experience.
- Minimum of 1+ years of leadership experience in food & beverage, organizing a team for optimal customer service.
- Flexible scheduling based on business demands, including nights, weekends, and holidays.
- Experience driving business revenue, controlling costs, and enhancing guest satisfaction and employee engagement.
- Demonstrated ability to lead teams to achieve or exceed goals.
- Strong attention to detail and time management skills.
- Comprehensive knowledge of food and beverage preparation, service standards, guest relations, and etiquette.
- Proficiency with desktop and hospitality software (e.g., Microsoft Office Suite, payroll systems, POS).
- Successful completion of criminal background check and drug screen.
- Highly proficient with food safety and sanitation practices, rules, and regulations.
Desired Qualifications
- Bachelor’s degree in hospitality, business, or related field.
- Preferably 2 years in a similar role.
- Manager-level certification from a nationally accredited food safety training program.
- Manager-level certification from a nationally accredited alcohol awareness & safety training program.
- Effective communication and conflict resolution skills; proven teamwork.
- Training or experience with hands-on kitchen and bar equipment maintenance.
- Prior management experience in the hotel/resort industry.
- Strong analytical skills to understand and react to key business indicators.
- Experience developing and implementing safety plans in compliance with regulations (e.g., Ergonomics, Emergency Response, Injury and Illness Prevention).
Physical Requirements
- Able to lift up to 30 lbs.
- Able to bend, stretch, and twist.
- Able to stand for long periods of time.
Pay
Annual base salary range: $60,000 - $64,500. An employee’s pay position within the salary range will be based on factors including relevant education, qualifications, certifications, experience, skills, seniority, geographic location, performance, and business needs.
