Machine Operator-Cut

Responsibilities

• Lead the cut-machine crew and maintain efficient machine operation.
• Prioritize the order of products to be cut based on demand.
• Set up machines for specific products, ensuring the correct program is used to maximize yields.
• Adjust weight and thickness parameters as necessary.
• Read work orders and communicate upcoming items and required piece counts to machine staff.
• Operate saws to portion subprimals into steaks by weight using a band saw.
• Merchandise subprimals in their entirety, program machines to maximize value, and meet customer specifications.
• Perform basic troubleshooting and lead the team when applicable.
• Conduct yield testing and maintain throughput (in pounds).
• Read tickets and special requests, recognize cuts of meat, and document numbers and basic descriptions.
• Work in a cold, wet, and fast-paced environment.
• Perform mathematical functions to ensure accurate product weight and size.

Skills

• Safe operation of saws, including visual recognition of portion weights.
• Responsibility for individual yield and throughput (in pounds).
• In-depth cutting knowledge and ability to program machines for maximum value.
• Basic ability to read tickets, special requests, and recognize cuts of meat.
• Ability to write numbers and basic descriptions.
• Knowledge of meat products and basic computer capabilities.
• Ability to perform light, moderate, and/or heavy physical tasks.
