Machine Operator- Cut

Responsibilities

• Lead the cut machine crew and maintain efficient operation of machines.
• Prioritize product orders to meet production demands.
• Set up machines according to specific product requirements to maximize yields.
• Adjust weight and thickness parameters as needed.
• Read and follow work orders, informing machine staff about upcoming items and piece counts.
• Operate saws to cut subprimal into steaks by weight using a band saw.

Skills

• Saw operation - Safe operation of saws, recognition of portion weights visually, responsibility for individual yield and throughput (in pounds).
• Portioning Operator - Single meat cutter, merchandising of subprimal, programming machines to maximize value and meet customer specifications, performing basic troubleshooting, leading teams when necessary, in-depth cutting knowledge, yield testing, maintaining throughput (in pounds), reading tickets and special requests, recognizing cuts of meat, writing numbers and basic descriptions, working in a cold/wet environment, fast-paced environment, performing mathematical functions for accurate weight and size products.
• Knowledge - Basic computer capabilities, knowledge of products.
