Lead Line Cooks prepare food, assist kitchen workers in the preparation of food items, and set up allocated stations for menu as instructed by the Chef, ensuring compliance with standards. This role involves arranging, preparing, and breaking down stations while maintaining high hygienic standards. Lead Line Cooks report to the Front of House Manager, Bar Manager, and Regional Manager, collaborating with other Line Cooks and back-of-house staff.

Responsibilities

  • Maintain a strong sense of ownership of entire culinary offerings
  • Maintain adequate prep to execute service and full menu nightly
  • Execute culinary offerings with precision and care
  • Report product needs to Front of House Manager
  • Assist culinary management in special projects, kitchen operations, and menu development
  • Act as a point of contact for the kitchen
  • Assist in training new hires
  • Maintain effective communication with culinary and FOH management teams and all staff
  • Oversee kitchen staff programming to ensure duties are met and exceeded
  • Maintain patron satisfaction by evaluating and auditing food, beverage, and service offerings
  • Maintain complete knowledge of products, ingredients, descriptions, sourcing, brands, and allergens
  • Use heightened awareness for allergy tables and code according to allergy standards
  • Provide creative influence to the culinary team in alignment with Gin & Luck Core Values
  • Maintain company policies and standard operating procedures (SOP)
  • Comply with sanitation standards and health/legal regulations
  • Assist in facility maintenance and improvement opportunities
  • Review internal communication via Slack before shifts
  • Approach shifts with a positive attitude and willingness to contribute to team goals
  • Check in with staff in your workspace upon arrival to offer assistance
  • Complete other duties as assigned by management
  • Ask for help when needed
  • Communicate nightly with culinary management in "Post Op" about opportunities for improvement
  • Promote a safe and clean environment for coworkers and guests
  • Work proactively with event staff to execute events to Gin & Luck standards
  • Continue education in all facets of operations, including bar, kitchen, and service
  • Update knowledge and skills through staff training opportunities
  • Assist in training new hires by guiding them through training trails and teaching expectations
  • Act professionally and represent Gin & Luck graciously in all settings
  • Follow all rules, policies, procedures, and conditions of employment

Requirements

  • 3+ years of proven Line Cook experience in a reputable establishment
  • Solid understanding of cooking techniques, flavor profiles, and food safety practices
  • Attention to detail and consistency in food quality and presentation
  • Familiarity with operating and maintaining kitchen equipment (grills, ovens, broilers, fryers, etc.)
  • Outstanding communication skills and ability to interact effectively with team members
  • Flexibility in working hours, including early mornings, evenings, weekends, and holidays
  • Patience, adaptability, self-motivation, and teamwork
  • High ethics, strong work ethic, and a great sense of humor

Preferred Qualifications

  • 3-4 years of Line Cook experience in a high-volume establishment
  • Skills, knowledge, and personality to provide a memorable experience for patrons

Physical Demands

  • Seeing, hearing, and speaking
  • Reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds
  • Sitting, standing for 4 to 8 hours, bending, and moving intermittently during working hours

Pay

$28/hour plus a point percentage of the full house tip pool based on hours worked per shift.
