Job Purpose
Under general supervision, provides the restaurant and kitchen with clean and sanitary ware. Operates and maintains cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.
Responsibilities
- Wash and disinfect kitchen and storeroom areas, tables, tools, knives, and equipment.
- Receive deliveries, store perishables properly, and rotate stock.
- Ensure clean wares are stored in appropriate areas.
- Use detergent, rinsing, and sanitizing chemicals in the 3-compartment sink to clean dishes.
- Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and rewashing.
- Rack and spray all racked items with hot water to loosen and remove food residue.
- Sort, soak, and wash/re- wash silverware.
- Breakdown dirty bus tubs.
- Clean and mop all areas in assigned departments.
- Dispose of glass in the proper containers.
- Break down cardboard boxes and place them and other recyclables in the recycle bin.
- Promptly report all maintenance issues.
- Absorb and respond to special requests.
- Assist with food preparation and line cook kitchen functions.
- If necessary, assist Servers with clearing, cleaning and resetting tables upon guests’ departure.
- If necessary, assist Servers with clearing room service trays from corridors.
- Maintain a well-groomed, professional appearance at all times, including uniform and name tag.
- Handle special requests promptly.
- Respond promptly to Managers requests.
- Attend required meetings.
- Be enthusiastic, helpful and a positive member of the team.
- Be professional, responsible and mature in conduct and behavior.
- Be understanding of, encouraging to and friendly with all co-workers.

Qualifications and Requirements
- High School diploma / Secondary qualification or equivalent.
- Experience with Marriott, Hilton, IHG, Wyndham or Hyatt processes and standards.
- The job requires the ability to perform the following:
- Most work tasks are performed indoors.
- Temperature is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (10 degrees F) and kitchens (+110 degrees F), possible for one hour or more.
- Must be able to stand and exert well-paced mobility for up to 4 hours in length.
- Ability to physically handle knives, pots, mirrors, or other display items as well as grasp, lift and carry same from shelves and otherwise transport up to 50 pounds to every area of the kitchen.
- Ability to perform cutting skills on work surfaces, topped with cutting boards, 3 to 4 feet in height (banquet kitchen, prep kitchen, bake shop, etc.).
- Proper usage and handling of various kitchen machinery to include slickers, buffalo chopper, grinders, mixers, and other kitchen related equipment.
- Ability to create, builds, handle, and dismantle displays up to 8 feet high, including ice carvings.
