About the role
The Kitchen Sanitation (Stewarding) Supervisor is responsible for leading the day-to-day operations of the Stewarding team, ensuring the highest standards of cleanliness, sanitation, safety, and organization throughout all food and beverage areas.
Responsibilities
- Create an atmosphere that induces guests to choose Hard Rock Casino Rockford for gaming entertainment.
- Build and retain guest relations and act as a mentor to team members to provide superior guest service.
- Hire, train, motivate, evaluate, and manage Stewards to ensure adequate guidance and resources for team members to achieve departmental objectives.
- Develop, implement, and monitor department standards, guidelines, and objectives, and maintain administrative processes such as budget and staffing to ensure proper planning and efficient operation of the department.
- Maintain cleanliness of back of the house areas including main kitchen, storage areas, dumpster, loading dock, TDR, and washing areas, ensuring compliance with health inspection requirements.
- Manage general cleaning schedule to meet or exceed health inspection requirements.
- Assist in maintaining inventory and coordinating distribution of big four items (china, glassware, linens, and silver), performing visual inspections to ensure cleanliness and safe transportation.
- Control equipment storage areas and issue equipment for the Food & Beverage Department.
- Attend and participate in meetings, completing follow-up as assigned.
- Perform regular and predictable cleaning and sanitizing tasks.
- Other duties as assigned.
Requirements
- High school diploma or equivalent.
- A minimum of three (3) years’ experience in a kitchen.
- Prior supervisory experience preferred.
Additional Requirements
- Must obtain and maintain all licenses/certifications per Federal, State, and Illinois Gaming Board standards.
- Must successfully pass background check.
- Must be at least twenty-one (21) years of age.
- Must be able to work nights, holidays, and weekends, as well as flexible shifts.
- Knowledge of pertinent federal, state, and local laws, codes, and regulations.
- Dish machine operation and assembly.
- Janitorial cleaning.
- Familiarity with handling of cleaning chemicals and preferred deep cleaning methods.
- Understanding of kitchen work and equipment usage, including cleaning of all types of kitchen equipment.
- Demonstrated organizational skills, budgeting experience, and full understanding of financials.
- Ability to communicate clearly and concisely, both orally and in writing.
- Flexibility to work varying shifts and time schedules as needed.
- Deliver programs creating a service level of excellence for internal and external guests.
- Utilize training to the organization’s strategic goals.
- Communicate effectively with all levels of employees and outside contacts.
- Review and comprehend all necessary documentation.
- Inspect and maintain all areas for which they are responsible.
- Stock and retrieve supplies as needed.
